Split personality

Wow, sometimes I feel like I’m 2 different people! My posts on Sunday and Monday nights were not exactly chipper, and then we have a day like today, when everything just goes smoothly and I can’t even understand why Elina from 2 days ago had so much trouble. Good thing that days like today exist because I sure do enjoy them! ;)

BREAKFAST

Breakfast definitely started the day on the right foot – this baby I got from Whole Foods in Austin was the main star! Ever since I made Ellie Krieger’s pumpkin pie muffins, I’ve been obsessed with everything-pumpkin (must make them again soon)!!

Pre-made mixes are perfect for a week-day breakfast! 3 pumpkin pancakes with warm apple chunks, oikos and walnut pieces:

PRE-WORKOUT SNACK

1T TJ’s almond butter + baby carrots. I love this combo!!

Workout – 45 minute bootcamp class. Oh yeah, my quads are burning. We did sprints today!!

LUNCH

An amazing salad!! Organic mixed greens, grape tomatoes, raw cauliflower, Niman Ranch ham (it’s the best!!!), pear slices and almonds, dressed in 1T of Annie’s balsamic vinaigrette.

This rocked!! I just love fruit in savory salads. Who needs to spend $10 on a salad?!!

DINNER

I’ve been excited for weeks about this recipe from Cooking Light for chicken-butternut tagine. I imagined intense flavors, all melting together in one ethnic dish…

Unfortunately both Adam and I found it bland. I used the wrong olives, which was definitely a bad mistake (they weren’t salty enough!) but otherwise I’m not sure what went wrong. :(

Dessert made up for a lack-luster dinner :) I realized that I haven’t had any treats all day, so I dug into a mini piece of cheesecake we had in the freezer. Come here, baby…

I loved being able to enjoy a little dessert with absolutely no guilt. I’m all for indulging, just in moderation. This was perfection!! What a great day! :mrgreen:

Hanging on to summer

Man, the weather in Boston is dreary. I know many of you are super excited for fall but I am just going to stay in denial for a little longer if you don’t mind ;) It’s rainy and cold… and I want summer back! I’m hanging on to summer for as long as I can by incorporating fresh summer fruit into nearly every meal. At least my mouth thinks it’s still summer :lol:

Breakfast: banana pb&j oats with fresh organic Maine blueberries

I love it when peanut butter melts all over the warm oats! This was a great bowl of creamy oats. I have stove-top oats down to a science by now :D

Mid-morning snack: Pro Bar fruition cran-raspberry bar from the Summit swag bag:

It was like a larabar with oats. I really enjoyed the raspberry flavor, and this bar was generally delicious. My only complaint is that it’s maybe slightly too sweet. One of the ingredients was brown rice syrup, and I think the dates could have provided enough sweetness without the need for additional sweetener.

Lunch was great! It was based on this recipe from Cooking Light for roast chicken salad with peaches, goat cheese, and pecan. Really I just followed the recipe to make the dressing, omitting the minced shallots, used some organic pulled chicken that I had leftover from last night’s pulled chicken sandwich and then added a nectarine from the farmers market and of course goat cheese + pecans. Nectarines + goat cheese + pecans = heaven! :mrgreen:

So Delicious 100 calorie coconut ice cream mini for dessert! Perfecto :grin:

Mid-afternoon snack: yogurt parfait – rest of nectarine from lunch, organic strawberries, raspberries, and Erin Baker’s peanut butter granola layered between plain oikos. Light and healthy!

Dinner: cheesy/tomato bolognese over ww pasta. Once again, excuse the picture quality :oops:

Late night snack: dry roasted almonds + organic espresso chocolate. Just what the doctor prescribed ;)

I’ve been really embarrassed by my pictures in the house lately. During the day, I actually go outside into our backyard and bring my table placemat to take the pics, but at night it’s dark in there (and cold) so I have to deal with the lighting inside. How do you take pictures indoors when natural light is unavailable? Do you have fancy lights set up? Tripods? I hate the yellowish tint over all my photos! Help!! :D

Enjoy your weekend! I still have some body aches from the flu, but I’m determined to meet up with a friend for a run on Sunday. My body is aching to move.
