<p><strong><em>Have you heard of miracle berries before?</em></strong> <a href="http://en.wikipedia.org/wiki/Synsepalum_dulcificum" target="_blank">Wikipedia</a> tells me it’s also called synsepalum dulcificum (way harder to pronounce!) which is a plant with a berry that <strong>makes sour things taste sweet</strong>. The tablets are basically ground up miracle berries – all natural <img style="border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://www.healthyandsane.com/wp-content/uploads/2012/01/wlEmoticon-smile2.png" /></p>
<p>Last night we had our friends Jim and Liz over for dinner to experiment with this “mysterious fruit tab.” We started the dinner by dissolving a tablet on our tongues and then <strong>dove into lemons, limes and grapefruit</strong>. Not gonna lie, it was a little scary to take the first bite! <em>Would it really work?</em></p>

<p>Wow, guys. This was crazy. Seriously insane. Everything was <strong>SO SWEET</strong> – I honestly had no idea how sweet they’d be (and started getting a little nervous that our whole dinner will taste like pure sugar). Biting into a lime and being overwhelmed by its sweetness was surreal (the limes were the sweetest – almost inedible at first because of how sweet they were).</p>
<p>We calmed our palettes for a minute with these <strong><a href="http://www.bakedbyrachel.com/2011/02/clover-rolls/" target="_blank">clover rolls</a></strong>, which had nothing to do with our experiment but delicious nonetheless. Definitely a must-make again recipe!</p>

<p>Aside from the rolls which were a last minute decision (a brilliant last minute decision!), the rest of the dinner all centered around citrus. I looked for recipes that utilized oranges (already sweet) but used lemons and grapefruit instead, knowing they would be made sweeter because of the tablets.</p>

<p>My beverage of choice for the night – it had citrus notes which turned sweet. The beer tasted kind of like a beer cocktail as a result. <p>The effect lasts between 30 minutes and 2 hours and over the course of dinner we definitely felt it fade. The citrus still tasted very sweet but we could start slowly also tasting mild sour notes. Luckily non-citrusy components made the meal a real dinner – salmon, avocado, jalapenos all stayed true to themselves <img style="border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://www.healthyandsane.com/wp-content/uploads/2012/01/wlEmoticon-smile2.png" /></p>
<p>Of course we had to finish the meal with some <strong>lemon sherbet</strong>. This particular brand was super creamy – the perfect ending to a sweet citrus meal!</p>

<p>This was super fun!! Apparently hot sauce and radishes should have been part of our experiment too. I may just have to keep playing around with this stuff. <p>Hi y’all (I’m currently in the airport on the way to New Orleans, so I’m getting myself in the mood). Happy Friday!! I am obviously in a great mood since vacation is just hours away. The weekend is just around the corner for you too, so I wanted to share a quick and easy recipe with you before I shut my computer down for a few days.</p>

<p>Buffalo sauce. OMG, I love <strong>buffalo sauce</strong>. If I didn’t worry about killing my taste buds, I’d be totally cool with covering everything in it – breakfast, lunch and dinner. Something about how acidic and spicy it is. LOVE.</p>

<p>A lot of buffalo chicken dip recipes call for canned chicken (eww) and butter (totally unnecessary). I came up with this on a whim the other day and it was <strong>the best buffalo chicken dip I’ve ever had</strong>. It’s not exactly health food but it’s just a little lighter.</p>
<p><strong>Ultimate healthified buffalo chicken dip</strong> (serves a crowd)</p>
<ul>
<li>2 poached chicken breasts, shredded</li>
<li>2 packages (8oz ea) neufchatel (low fat cream cheese), softened</li>
<li>1 cup low fat sour cream</li>
<li>3/4 cup <a href="http://www.franksredhot.com/products/hot-buffalo-wings-sauce" target="_blank">Frank’s RedHot buffalo wing sauce</a></li>
<li>1 teaspoon of garlic powder</li>
<li>1.5 cups shredded reduced fat cheese (I used 1/2 mozzarella, 1/2 cheddar), divided</li>
<li>Baby carrots and pita chips for dipping</li>
</ul>
<p>Instructions:</p>
<p>1. Preheat oven, or toaster oven, to 350*.</p>
<p>2. Mix all ingredients together, hold 1/2 cup cheese. The Kitchen Aid with a paddle attachment does an amazing job of creaming it all together. Super easy!</p>
<p>3. Transfer to 9&#215;5 loaf fan (or another baking dish), sprinkle remaining cheese over the top.</p>
<p>4. Bake for 15 minutes.</p>
<p>4. Broil for 1-2 minutes to get the cheese extra golden on top.</p>
<p>Enjoy!!</p>
<p>Creamy, buffalo-saucy, cheesy. Dig in!</p>

			<content:encoded><![CDATA[<p>The past few weeks I had a few after work get-togethers, which taught me a few lessons about <strong>mid-week entertaining</strong>.  Last week went smoothly, while last night I was scrambling last minute and then ended up putting a few of my guests to work to help me push out some food (thank you <a href="http://megan-deliciousdishings.blogspot.com/" target="_blank">Megan </a>and <a href="http://traveleatlove.com/" target="_blank">Meghan </a>- I couldn&#8217;t have done it without you!).</p>
<p>So here are my DO&#8217;s and DON&#8217;Ts based on my experiences:</p>
<p><span style="color: #008000;"><strong>DO</strong></span></p>
<ul>
<li><strong>Adjust your own expectations</strong>. This is a mid-week gathering and you have a full time job. No one expects a feast of all feasts. Which brings me to&#8230;</li>
<li><strong>Have a manageable plan</strong>. Last week I gave myself the task of making 2 apps and 1 dessert which I quickly whipped up together the night before. Everyone was more than happy with just that and a cooler full of beer!</li>
<li><strong>Get help</strong> &#8211; <strong>from your guests and your grocery store </strong> <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Guests always ask what to bring &#8211; give them specific instructions (beer, dessert, etc.) or go a step further and make it a <strong>potluck gathering</strong>. Last night the feast below (and more! we had to use a side table) was all put out by my guests!! A few items from the grocery store completed the table. <span style="text-decoration: underline;">You don&#8217;t have to cook every single thing from scratch</span>. Cheese + cured meats went quickly. Crostini from fresh baguette + ricotta and sour cherry jam (all store-bought) was one of my favorite appetizers of the night! Even on the night of the party, get help from your guests with last minute touches if you need it. Many of them offer help, take them up on it if it&#8217;s going to ensure you&#8217;re not stuck in the kitchen all night while everyone else is having fun (although that shouldn&#8217;t happen if you actually plan right &#8211; see don&#8217;ts.)</li>
<li><strong>Have a partner in crime</strong> – Adam buzzed people in and was making sure everyone had a drink in hand and enjoyed each other’s company while I was still finishing up my dish.</li>
</ul>

<li><strong>Make things ahead of time</strong>. I know this is obvious but man, was I reminded of this last night. I left a lot of things to last minute and paid the price. I like dips and dishes that can be warmed up or baked right before the party. Do the work ahead of time and you&#8217;ll be much more likely to enjoy the party you&#8217;re hosting!</li>
</ul>
<p><span style="color: #008000;"><strong>DON&#8217;T</strong></span></p>
<ul>
<li><strong>Don’t over commit &#8211; <em>seriously, don&#8217;t! </em></strong>I know you may feel like people have high expectations because you&#8217;re known as the food blogger or a really great cook, but remember &#8211; <em><strong>this is a midweek party</strong></em>. Keep it simple and manageable and your guests will be happy. I promise! <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </li>
<li><strong>Don&#8217;t be cocky &#8211; </strong>Last party went so smoothly that you think you can just wing it and end up watching 5 episodes of Top Chef Just Desserts instead of prepping the night before? (totally hypothetical <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  ). Nope &#8211; not a good plan. Have a plan and execute on it  &#8211; this is how you keep your reputation as the hostest with the mostest!</li>
<li><span><strong><em>Don&#8217;t be a perfectionist</em></strong> &#8211; Last minute things at work so you couldn&#8217;t get off early to make sure everything was 100% ready before your guests arrived? It&#8217;s OK! As I was still making the pizza monkey bread below and needed my guests&#8217; help, I kept rambling about how I was the worst host ever. Megan said something so sweet that really brought me to reality. She said: &#8220;Elina, look around. Everyone is having fun in the living room. You&#8217;re among friends. And you&#8217;re human.&#8221; Phew! <strong>It&#8217;s good to be among friends.</strong></span></li>
</ul>

Going through it, combined with stress at work and the <a href="http://www.christieinge.com/feel-your-feelings-group/" target="_blank">feelings e-course</a> I’ve been taking, has put me in a bit of a funk for a few days. I tried going shopping too and wasn’t too successful. Nothing was looking quite right (and was several sizes larger than I was before) – it’s tough to embrace your “new body” when that happens. </p>
<p>Anyways, I’m cool now and I want to tell you about the dinner I cooked for my<strong> dad’s birthday</strong> last weekend (sticking to <a href="http://www.healthyandsane.com/2011/06/my-30-by-30-list/">my 30 by 30 list</a> and hosting dinner parties left and right. haha)! His birthday happens to be on my wedding anniversary. Adam and I celebrated the night, just the 2 of us, but I had plans to make it up to my dad soon enough.</p>
<p><strong><em>When hosting a dinner party do you pick a theme or just go with delicious recipes?</em></strong> </p>
<p>I wanted to make sure this was really really delicious so for my main course I chose a recipe I’ve made (and loved!) before – <a href="http://www.healthyandsane.com/2011/05/welcome-back-summer-weather/" target="_blank">chicken thighs on the grill</a> (btw, I always tag <a href="http://www.healthyandsane.com/category/misc/favorite-recipes/" target="_blank">my favorite recipes</a> so you can find them easily… on the right hand side).</p>

<p>The angel food cake meets Italian grandmother was so light and the perfect ending to our Italian feast. Adam asked that I add it to our rotation of desserts (which means I should start a rotation of desserts! Yessss). I’m adding more strawberries between each layer next time!</p>

			<content:encoded><![CDATA[<p>Sorry for the sporadic posting recently. I’ve been working on living a full and guiltless life lately which means that if other activities take over with no time for blogging, as much as I miss it, I’m okay with it. All of it. It’s the happiest I’ve been in a really long time and I’m embracing it! [PS – if you just type in the URL to see if there are new posts, I know it may be frustrating to not know if there is going to be something new and checking back over and over with no good news. May I suggest <a href="http://feedburner.google.com/fb/a/mailverify?uri=HealthyAndSane&amp;loc=en_US" target="_blank">email alerts</a>? Hopefully that makes things easier and I do hope my schedule normalizes soon).</p>
<p>Now onto something fun I did this weekend. The weather was dreadful (stoopid rain) but we still had a chance to eat at <a href="http://www.exnecambridge.com/" target="_blank"><strong>East by Northeast</strong></a> – a sustainable Chinese tapas place, which happens to be on <a href="http://www.healthyandsane.com/2011/06/my-30-by-30-list/" target="_blank"><strong>my 30 by 30 list</strong></a>. The place was adorable but the lighting was not good for pictures so Adam and I happily enjoyed a photo-free dinner.</p>
<p>I continued to plow through my list (ok not exactly “plow”) by inviting <a href="http://www.lostinthebeeraisle.com/"><strong>Josh</strong></a><strong> and </strong><a href="http://twitter.com/#!/mgonyeo"><strong>Melissa</strong></a><strong> over for dinner</strong>. I’m totally crushing my goal of 12 dinners this year (this one was #3 already in less than a month! Told ya I’ve been busy!!).</p>

<p>I don’t think that having a few friends over for dinner needs to be a big production, but if it’s the weekend and I have time, I love making things a little more special. I’ve mentioned it before but I just love browsing through recipes and having a theme in mind (vegan in this case) was actually fun.</p>

<p>I doubled the recipe to make sure we have enough and it made A LOT.</p>

<p>This was quick and very flavorful. Would make for a really great entrée over rice.</p>

<p>While the guys were chatting it up, I went back to the kitchen to make the hand pies which… were a pain in the ass. Instead of butter (not vegan) the dough had <strong>coconut oil</strong> which was pretty hard to work with. It was either rock solid or almost mushy the second it started to warm up. I persevered and made 5 large and 1 mini hand pie and crossed my fingers that it would bake up into something edible.</p>

<p>While the coconut oil was hard to work with, it made these taste so much more special. It had the texture similar to any short dough (given the high fat content) but had a natural sweetness that was very appealing. Btw, I added some<strong> black beans</strong> to the filling (and omitted the onions of course) which was a great decision. Some <strong>hot sauce</strong> over the top and these were lip-smacking good. We devoured them within minutes! (I saved the dough and the remaining filling and am determined to make a few more pies for me and Adam to enjoy later this week). I’d make these again and see if practice makes perfect <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/06/wlEmoticon-smile1.png" /></p>

<p>I used <strong>dark vegan chocolate chips</strong> instead of white, and <strong>dried cranberries</strong> instead of cherries for the dough balls and am very happy with the results. Just like the <a href="http://www.healthyandsane.com/2011/01/vegan-dinner-with-friends-giveaway-winners-announced/">peanut butter chocolate chip dough balls</a> the dough was quite dry, but the taste was nothing short of <strong>amazing</strong>. Pea Daddy said “Those will be gone by midnight”… well ours were gone by 10! <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-openmouthedsmile" alt="Open-mouthed smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/06/wlEmoticon-openmouthedsmile1.png" /></p>
<p>The vegan ice cream was delicious as well. If you put it side by side with the “cows milk” ice cream, it wouldn’t win but in a class by itself, it was very delicious (and well, if you’re vegan – obviously that taste test would never even happen). I LOVED the <strong>cookie dough made of cashews, dates and chocolate chips</strong> (larabar-style) and will make those again just for a random dessert soon for sure (I ran out of cashews, otherwise I would have doubled the recipe right there!). 			<content:encoded><![CDATA[<p>Tonight is <a href="http://en.wikipedia.org/wiki/Passover">Passover</a> eve and since I have some Jewish blood in me, I figured this is the right time to tell you about a really fun dinner party I attended last weekend.</p>
<p>My dad’s side of the family is Jewish and although I lived in Israel ages 12-15 (middle school) I have to be honest that I don’t know enough about all the traditions in detail. For example – Passover to me (and this is the extent to which we followed it) is a week long holiday during which you’re not allowed to eat leavened bread. I’m ashamed to admit that that’s kind of all I seem to remember from my torah studies in Israel. <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-embarrassedsmile" alt="Embarrassed smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/04/wlEmoticon-embarrassedsmile.png" /></p>
<p>So when <a href="http://www.carascravings.com/">Cara</a> reached out to all the local Jewish food bloggers with an idea of a dinner party <strong>honoring the tradition of Passover with a twist</strong>, I was excited to learn more and of course participate in the eating <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-winkingsmile" alt="Winking smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/04/wlEmoticon-winkingsmile5.png" />&#160;</p>
<p>A few non-Jewish blogger friends joined us as well. <p>This may get slightly geeky… bare with me <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-winkingsmile" alt="Winking smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/04/wlEmoticon-winkingsmile5.png" /> Some <strong>Passover basics</strong>: </p>
<p>The holiday honors the the story of the Exodus, in which Israelies were freed from slavery in Egypt. It is said that they left in such a hurry that they could not wait for bread to rise. In commemoration, for the duration of Passover no leavened bread is eaten. That’s why matzo, which is unleavened, is the primary symbol of the holiday. (Thanks <a href="http://en.wikipedia.org/wiki/Passover">Wikipedia</a> <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/04/wlEmoticon-smile2.png" />)</p>
<p>On Passover eve, a <a href="http://en.wikipedia.org/wiki/Passover_Seder">Passover Seder</a> (ritual feast) takes place, which begins with retelling of the Exodus story and eating (or merely placing) certain symbolic foods on the Seder plate. A traditional dinner follows, which actually does not have anything to do with the Sedar plate. That’s where Cara decided to combine the 2… <strong>a modern twist on the tradition</strong>. Why not? <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/04/wlEmoticon-smile2.png" /></p>
<p><strong>We each decided to prepare a dish inspired by a symbolic ingredient on the Seder Plate</strong>. The “rules” stated that each dish should be following Passover guidelines (no flour and anything leavened, no wheat, barley, oats, spelt, or rye) and general kosher guidelines (no meat + dairy together, no shellfish, no pork) but otherwise it didn’t need to be traditionally Jewish. Pretty fun, no?</p>

<p>Here is what we came up with…</p>
<p>Melissa made the <strong>horseradish cauliflower latkes</strong> inspired by the<strong> chazeret</strong> (bitter herb), which symbolizes the <strong>bitterness of slavery</strong> the Jews endured in Egypt</p>

<p>These were a really fun twist on the potato latkes. Still crispy on the outside, soft on the inside… and a bit lighter/less starchy. <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/04/wlEmoticon-smile2.png" /></p>
<p>Renee made the <strong>charoset</strong>, which is a sweet, brown mixture representing the <strong>mortar</strong> used by the Jewish slaves to build the storehouses of Egypt.</p>

<p>Jen used the traditional ingredients of <strong>charoset</strong> (nuts, apples, cinnamon) to make the <strong><a href="http://www.beantownbaker.com/2011/04/crunchy-apple-slaw.html">crunchy apple slaw</a></strong> with cabbage, broccoli slaw, apples, almonds and scallions. Unfortunately I couldn’t have any due to the scallions but it looked super fresh and crunchy. I’m ready for summer!!</p>

<p>I made a<strong> <em>massaged kale salad with roasted beets, goat cheese, walnuts and prunes</em></strong>, inspired by the <strong>karpas</strong> (green vegetable other than bitter herb) which is usually <strong>dipped in salted water</strong> which represents the <strong>tears</strong> of Jewish slaves.</p>

<p>[I “massaged” the kale with some lemon juice, basil EVOO and some sea salt, then added the mix-ins. Everyone seemed to really love it. I sure did <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/04/wlEmoticon-smile2.png" /> ]</p>
<p>Amanda also made some <strong>horseradish and matzo crusted asparagus</strong>, which combined a few of the Seder plate elements (chazeret, karpas). Such a fun roasted veggie!</p>

<p>No Seder plate is complete without <strong>z’roa</strong>, which is typically lamb or goat shankbone, symbolizing the Passover <strong>sacrifice</strong> through lamb that was offered in the <a href="http://en.wikipedia.org/wiki/Temple_in_Jerusalem">Temple in Jerusalem</a>, then roasted and eaten as part of the meal on Seder night (fun fact that I just learned – <strong>vegetarians substitute beets</strong> for meat…looks like I got it covered in my karpas inspired dish!). Cara tackled this job with her <strong><a href="http://www.carascravings.com/2011/04/spiced-lamb-and-eggplant-matzoh-crepes.html">spiced lamb and pickled eggplant filled matzo crepes</a></strong>.</p>

<p>I am not typically a fan of lamb and was just going to have a bite not to be rude, but I absolutely LOVED this dish. It was definitely the highlight of the meal for me (partly because it was such a surprise). Cara braised the meat for hours, making the meat super tender while allowing it to soak up all the spices. It had a really great sweet and sour balance. If lamb always tasted like this, I’d be all about it <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/04/wlEmoticon-smile2.png" /></p>
<p>Last element of the Seder plate <strong>beitzah</strong>, which is hard boiled egg symbolizing <strong>mourning</strong> (over the destruction of the Temple and our inability to offer any kind of sacrifices in honor of the Passover holiday). Megan got this covered with her <strong><a href="http://cookingwhims.wordpress.com/2011/04/11/classic-deviled-eggs/">deviled eggs</a></strong>!</p>

When it was time for dessert, Shannon’s <strong><a href="http://tri2cook.blogspot.com/2011/03/wasabi-truffles.html">wasabi white chocolate truffles with crystalized ginger</a></strong> were the perfect <strong>chazeret</strong> inspired dish!</p>

			<content:encoded><![CDATA[<p>Having a day off (I’m off this whole week!) apparently does not mean that you will have plenty of time for things like blogging. Sorry for the delay of today’s post. I wanted to make sure to share last night’s meal with you though. I always say “better late than never!”… maybe ‘cause I’m always late. lol</p>
<p>SO, if you’ve seen my post on <a href="http://www.russianbites.com/">Russian Bites</a>, or my <a href="http://www.facebook.com/#!/pages/Healthy-and-Sane/173678705980159">facebook</a>/<a href="www.twitter.com/elinacooks">twitter</a> you may have known that I <strong>had my parents and parents in law over for dinner </strong>last night. It’s been long overdue and I’m really excited that we finally had a change to do it. It was really fun! So fun, in fact, that I totally forgot to take pictures of all the food (namely the appetizers) so I’ll you’ll have to use your imagination if you’d like to pretend you were at the <a href="http://www.healthyandsane.com/">Healthy and Sane</a> household last night.</p>
<p>This was the<strong> smoothest and least stressful dinner party</strong> I’ve ever had. Here is why!</p>
<ul>
<li>I took <strong>shortcuts</strong>! Pre-dinner nibbles included <strong>green olives marinated with lemons and garlic</strong><em> </em>(purchased from the <a href="http://www.wholefoods.com">Whole Foods</a> deli department), <strong>aged gouda</strong> (just cut up), <strong>mozzarella/grape tomato skewers</strong> (super simple – Adam assembled them!) and <strong>hummus with baby carrots and crackers</strong> (hummus was the only thing I made from scratch for the apps).</li>
<li>I <strong>made dessert the night before</strong> (I had to given the recipe, but I just LOVED not worrying about that course at all the day of the dinner).</li>
<li>Despite my overambitious self, I stuck to “just” <strong>one main course</strong> (which <strong>I’ve made before &lt;- I knew what to expect</strong>!!). I did make a side of greens, although I <strong>accepted help</strong> (my mom washed the escarole and helped me with dessert the night prior; Adam made the mozzarella/tomato skewers). Thanks guys!</li>
<li>I <strong>invited guests a few hours prior to dinner</strong> being served. This gave everyone time to chat, drink and munch… and gave me more time to prep (I always stress about having everything ready when people arrive! No need this time!!).</li>
</ul>
<p>With all the wine our guests brought in and additional desserts (see below), we certainly had no shortage of food and drinks. So here we go, last night’s (pictured) eats!</p>

<p>My father in law LOVES Italian and happens to be the pickiest eater of the bunch (although I think my mom sometimes tries to give him a run for his money <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_lol.gif' alt=':lol:' class='wp-smiley' />  ) so choosing an Italian main entrée was the easy choice. I decided that <strong><a href="http://www.healthyandsane.com/2009/01/im-a-spaz/">spinach, artichoke and feta stuffed shells</a></strong> was a fun and impressive enough dish for a family dinner. It fed a crowd too! I made 1.5 times the recipe and it made two large pans (we hardly finished one of them so there were plenty of leftovers… not complaining here <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-winkingsmile" alt="Winking smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/02/wlEmoticon-winkingsmile4.png" /> ).</p>

<p>This was carby, cheesy and comforting. A simple side dish of <strong><a href="http://www.healthyandsane.com/2010/02/breaking-in-the-kitchen/">escarole and pine</a> nuts</strong> (doubled) nicely broke out the richness of the main course.</p>

			<content:encoded><![CDATA[<p>I&#8217;m here, with your help &#8211; writing a post for challenge #3 for <a href="http://www.foodbuzz.com/project_food_blog">Project Food Blog</a>. Thank you!! Every challenge has been exciting and complex for its own reasons. This one required to &#8220;host a <strong>luxurious dinner party</strong> where your guests will discover new tastes and exotic flavors.&#8221; I&#8217;ve had a good share of high end meals <em>out</em> but what a luxurious meal <em>at home</em> meant was obviously up for interpretation. At the end, I decided that a luxury meal <em>to me</em> meant that it had to be <strong>plated</strong>, consist of <strong>fresh ingredients and flavors</strong> and involve <strong>several courses</strong>. I wanted to make sure that this was the best, most luxurious meal I&#8217;ve ever cooked&#8230; I was ambitious. <strong>I cooked everything from scratch</strong>, which included <strong>freshly baked bread</strong> and <strong>homemade ice cream</strong> (I bought some back-ups just in case&#8230; you never know <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  ). Ever since getting back from <a href="http://healthyandsane.com/2010/09/eating-our-way-through-san-francisco/">vacation</a>, I&#8217;ve had plans every night this week so I ended up taking Friday off work (that&#8217;s when the meal took place) since I had no time to prep any other night beforehand. This was going to be an involved meal and I needed time to make it happen! Without further adieu, THE MENU:</p>

<p>I planned the meal the night before and hit up 4 grocery stores the morning of (it was supposed to be just 2, but they didn&#8217;t have pork tenderloin at Whole Foods and I ended up driving around to 2 other stores until finally changing the menu to pork chops &#8211; <strong>you have to be flexible sometimes</strong>. I should have made this decision right away but sometimes you get married to the menu and it&#8217;s hard to let go. It actually ended up being <em>better</em> at the end. <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' />  )</p>

<p>The night before I also <strong>made a detailed list of everything that needs to be done</strong>, including specific times for certain steps (like &#8220;churn ice cream at 4:30&#8243;, &#8220;bake bread at 7&#8243;). <p>Don&#8217;t forget to stop for lunch! I was going at 100 miles/hour; my stomach growled around 3 and I realized I haven&#8217;t eaten since breakfast. You need fuel, even if you&#8217;re having a little too much fun in the kitchen. <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':grin:' class='wp-smiley' /> </p>
<p>Finally the guests arrived a little after 8. I had <strong>fresh bread</strong> ready (kept warm in the oven until they got there). The recipe for the <strong>hummus bread</strong> comes from my newly acquired <a href="http://www.amazon.com/Arthur-Flour-Whole-Grain-Baking/dp/0881507199">King Arthur Flour Whole Grain Baking</a> cookbook. I made the hummus myself, substituting white beans for chickpeas, and served the rest of the dip alongside the bread. This was my first attempt at making bread and I found the dough difficult to work with and very sticky. It turned out well though. The guests had no idea about my struggles earlier in the day. <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>I also decided to be a little more fancy (you may say &#8220;luxurious&#8221; lol) by making some <strong>roasted garlic and thyme butter </strong>(recipe <a href="http://recipes.epicurean.com/recipe/1178/roasted-garlic-butter.html">here</a>). I think flavored butter is always a little more special and it&#8217;s definitely a very easy way to impress your guests. <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':grin:' class='wp-smiley' /> </p>

<p>Since I was responsible for making all the dishes, timing was key. I knew the amuse bouche and the entrees will take a bit of time (I needed them fresh out of the oven!) so I plated the salad when the guests arrived but didn&#8217;t serve it right away. About 15 minutes into dinner, everyone got their own pre-portioned salad.</p>

<p>My inspiration for the salad was the one we had at <a href="../2010/09/drinking-in-napa/">Zuzu</a> just days prior. I actually had Anne Burrelle&#8217;s <a href="http://www.foodnetwork.com/recipes/anne-burrell/raw-artichoke-and-parmigiano-salad-recipe/index.html">raw artichoke salad recipe</a> saved for months and thought it would be a great base for the salad.  Unfortunately, baby artichokes and me just don&#8217;t get along (they didn&#8217;t  shave properly &#8211; I was getting tiny flakes that just looked messy) so I  gave up on them pretty early on. The shaved artichokes were pretty much a garnish in the salad at the end (each person maybe got 1 artichoke&#8217;s worth &#8211; if that). The salad was very well balanced, though &#8211; peppery arugula, sharp cheese,  nutty pine nuts and a rich finish of truffle oil. I was pretty happy to  see everyone clearing their plates (including veggie haters). [<em>She pats herself on the back</em> <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  ]</p>
<p>While Adam was being a good host, I had to get back to business. I prepped the amuse bouche prior to everyone&#8217;s arrival but the little cups still needed to bake. The pork chops were also stuffed and wrapped but needed to bake.</p>

<p><strong>Puff pastry cups with creamy mushrooms, thyme and peas</strong>. The stuffing recipe was based on <a href="http://www.brutsellog.com/tag/plain-flour/">this one</a> (I subbed ham for peas). I made my own &#8220;cups&#8221; by slicing a sheet of puff pastry dough into 9 squares, rolling it out and stuffing it into the muffin pan. So rich and buttery. A nice segway from salad to the main course if I do say so myself. <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>In 15 minutes or so, everything else came together (and the chocolate cakes were ready to go in the oven). I served the stuffed pork chops to each guest individually (the recipe is exactly like <a href="http://healthyandsane.com/2009/04/making-up-for-lost-time/">this one</a> but I used pork chops instead of pork tenderloin, baking the chops covered with wet parchment paper for 15 minutes and then uncovered for 10). The sides were served family-style.</p>

<p>I especially loved the wild mushrooms soaked in the delicious red wine vinegar and EVOO dressing. Liz and I were picking them out of the large dish towards the end of the night. <p>No meal is complete without a fantastic dessert. This one definitely fit the bill!</p>

<p>The cake was based on <a href="http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&amp;recipe_id=554681">this recipe</a> (I baked them in my popover pan) and was just seriously mind-blowing. It tasted rich and decadent &#8211; the way a chocolate dessert should be. The <strong>butter pecan ice cream with candied bacon</strong> had the perfect cooling effect (ice cream base was a Ben &amp; Jerry&#8217;s recipe, candied bacon recipe came from <a href="http://www.davidlebovitz.com/2008/03/candied-bacon-i-1/">here</a>). I decided to do the bacon twist to make this dessert just a little different. It added a nice sweet-salty component to the ice cream and was delicious although I think Ben &amp; Jerry&#8217;s butter pecan ice cream is perfect on its own (so I actually wouldn&#8217;t mess with it next time).</p>

<p>This was definitely the most involved, most luxurious meal I&#8217;ve ever made. My feet were burning by the end of the night (I was literally going non-stop for 12 hours!) but I wouldn&#8217;t change a thing. Being in the kitchen makes me happy and once in a while it&#8217;s fun to take it up a notch and make it fancy (yet still mostly healthy!).</p>

			<content:encoded><![CDATA[<p>Yesterday Adam and I hosted our <strong>first &#8220;official&#8221; bbq in our new place</strong>. We&#8217;ve had people over before but this time we actually took the cookout a little more seriously (read: I carefully planned the menu for the night and we invited all of our friends over). It was a lot of fun!</p>
<p>I have to say, I love entertaining but I still always feel like I&#8217;m walking the line between fearing that we won&#8217;t have enough food for everyone and also making sure that I don&#8217;t completely go overboard.  A little bit of delegation this time around helped A LOT. My friend Katie was in change of one of the salads and <a href="http://tri2cook.blogspot.com/">Shannon</a> took care of one of the desserts. Adam as always was responsible for a clean house and was also my sous chef. <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  Everything went pretty smoothly once I finalized the menu. Menu planning is definitely one of my favorite parts of hosting. <p><span style="color: #008000;"><strong>THE LIST<br />
</strong></span></p>
<p>I finalized the menu a few days prior to the party and made a detailed grocery list under 3 categories &#8211; farmers market, Trader Joe&#8217;s and Whole Foods. The day before the party we went to all three. Shopping for produce at the farmers market was so much fun!! I felt like I was a restaurant chef buying in bulk. Lugging all the stuff back was a bit of a different story&#8230; <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  <strong>A good grocery list made shopping fairly quick</strong> too. We went in and out stores fast, leaving more time for prep the night before. I wanted to get as much done as possible so that I didn&#8217;t have to nix things last moment.</p>
<p><span style="color: #008000;"><strong>THE NIGHT BEFORE</strong></span></p>
<p>First thing I made was the<strong> cookie dough</strong>. It needed 24 hours of chilling time which I didn&#8217;t even have so I made it as soon as I realized it. Tip on this particular recipe (which I HIGHLY recommend btw) &#8211; shape the dough into balls before freezing. It was rock hard the next day and I actually had to let it sit on the counter for 30 minutes before finally just using a super sharp knife to carve pieces out that I then shaped. You could save yourself that trouble (I will, because these may just become my &#8220;it&#8221; choc chip cookies. They are NOT healthy though. That was my one treat for the evening). Next up, I made <strong>THREE batches of sangria</strong>. Sangria really needs to chill at least overnight, letting all the flavors meld together. Adam thought I was crazy making so much of it but let&#8217;s just say we didn&#8217;t have any left by the end of the party. Yes, it was a hit. I love having a &#8220;party cocktail&#8221; available for guests, as well as the usual selection of beer + wine. Next up I thought the <strong>corn salad</strong> could use some &#8220;marinading&#8221; as well. I have to say that that was actually a mistake. It tasted amazing when I made it but the next day it was a little too cold &#8211; the fridge was not this salad&#8217;s friend. You live and learn, right? <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  The last thing I did before hitting the hay was <strong>cut up all the veggies</strong> for dipping with hummus. At about midnight I called it a night. zzzzzz <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p><span style="color: #008000;"><strong>THE DAY OF</strong></span></p>
<p>No matter how prepared you think you are, time really flies the day of the party. I hit up a pilates class in the morning and then slaved in the kitchen until party time (I love cooking though so it was actually fun for me). I made the bruschetta mixture, the bean dip, then the veggie burgers, shaped the beef burgers, baked the cookies and cut up the fixins for the sliders. Adam cleaned, cut up the chicken and all the bread.</p>
