<p><strong><em>Have you heard of miracle berries before?</em></strong> <a href="http://en.wikipedia.org/wiki/Synsepalum_dulcificum" target="_blank">Wikipedia</a> tells me it’s also called synsepalum dulcificum (way harder to pronounce!) which is a plant with a berry that <strong>makes sour things taste sweet</strong>. The tablets are basically ground up miracle berries – all natural <img style="border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://www.healthyandsane.com/wp-content/uploads/2012/01/wlEmoticon-smile2.png" /></p>
<p>Last night we had our friends Jim and Liz over for dinner to experiment with this “mysterious fruit tab.” We started the dinner by dissolving a tablet on our tongues and then <strong>dove into lemons, limes and grapefruit</strong>. Not gonna lie, it was a little scary to take the first bite! <em>Would it really work?</em></p>

<p>Wow, guys. This was crazy. Seriously insane. Everything was <strong>SO SWEET</strong> – I honestly had no idea how sweet they’d be (and started getting a little nervous that our whole dinner will taste like pure sugar). Biting into a lime and being overwhelmed by its sweetness was surreal (the limes were the sweetest – almost inedible at first because of how sweet they were).</p>
<p>We calmed our palettes for a minute with these <strong><a href="http://www.bakedbyrachel.com/2011/02/clover-rolls/" target="_blank">clover rolls</a></strong>, which had nothing to do with our experiment but delicious nonetheless. Definitely a must-make again recipe!</p>

<p>Aside from the rolls which were a last minute decision (a brilliant last minute decision!), the rest of the dinner all centered around citrus. I looked for recipes that utilized oranges (already sweet) but used lemons and grapefruit instead, knowing they would be made sweeter because of the tablets.</p>

<p>My beverage of choice for the night – it had citrus notes which turned sweet. The beer tasted kind of like a beer cocktail as a result. <p>The effect lasts between 30 minutes and 2 hours and over the course of dinner we definitely felt it fade. The citrus still tasted very sweet but we could start slowly also tasting mild sour notes. Luckily non-citrusy components made the meal a real dinner – salmon, avocado, jalapenos all stayed true to themselves <img style="border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://www.healthyandsane.com/wp-content/uploads/2012/01/wlEmoticon-smile2.png" /></p>
<p>Of course we had to finish the meal with some <strong>lemon sherbet</strong>. This particular brand was super creamy – the perfect ending to a sweet citrus meal!</p>

<p>This was super fun!! Apparently hot sauce and radishes should have been part of our experiment too. I may just have to keep playing around with this stuff. <p><strong><em>Would you want to try this stuff? What would you make? </em></strong>I may use these for nights when my sweet tooth won’t stop nagging. A wedge of lemon would totally do the trick!</p>

<p>As I mentioned in the <a href="http://blog.healthyandsane.com/2012/01/truths/" target="_blank">my previous post</a>, my sister’s wedding is definitely motivating me to get a little more serious about healthy eating. I’m not going on any crazy diets but I am being a little more mindful about what I’m eating. I put up a big calendar on the fridge reminding me of the “big day” (sort of funny saying that since it’s not <em>my</em> wedding) and a few pictures of myself at a lower weight for motivation. It’s only been 1 day, but I feel like I’m approaching this in the right way and feel good about weight loss results that are sure to follow! </p>

<p>The best part? I have a few old favorites to ensure I’m eating <strong><em>satisfying</em> healthy meals</strong>. Like this strata. It comes together quite quickly, uses ingredients I always have on hand (well, I happened to have fresh sage on hand this time, but I’d just use dried if I didn’t) and it’s so <strong>warm and comforting</strong>. It has (whole wheat) <strong>sourdough bread and goat cheese</strong>. You can eat it for <strong>breakfast or dinner</strong>. And one quarter of the pan is a serving. Really, what’s not to love?!</p>

While I <em>hear</em> the gyms are packed (like they are every year in January) and every show on the Food Network seems to be about healthy recipes (btw, although olive oil is deemed a healthy fat, its use still appears to be a little too liberal in those healthy recipes), for me – 2012 so far has just been a number I’m not used to typing <img style="border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://www.healthyandsane.com/wp-content/uploads/2012/01/wlEmoticon-smile.png" /> I’m still <strong>on track with my </strong><a href="http://www.amazon.com/P90X-Hortons-Extreme-Fitness-Workout/dp/B000TG8D6I/ref=sr_1_1?ie=UTF8&amp;qid=1325781927&amp;sr=8-1" target="_blank">P90X workouts</a> (at home, away from crowds – LOVE) and I am <strong>no stranger to healthy cooking</strong>. Those chocolate cravings, which need constant “attending to” (read: feeding)? Yup those are still there too.</p>
<p>I wonder how many people really wake up on January 1 and find themselves with a list of <strong>resolutions</strong> that require immediate action. Do they have a clear plan? Are they overwhelmed? Do they have a good support system to help them? I hope so!</p>

<p>I’m the kind of person that attacks goals with <strong>intensity</strong>. I research, I plan, I write out mile-long to-do lists and schedules and then I go at it. This is how I’m approaching my new business (I promise to share the details with you – very soon!) and it’s been <em><strong>exhilarating</strong> </em>(so exhilarating in fact that I am having trouble falling asleep thinking of a million different things I could offer and cute little touches that would make me unique). The best part? I get to eat my “research.” <img style="border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none" class="wlEmoticon wlEmoticon-openmouthedsmile" alt="Open-mouthed smile" src="http://www.healthyandsane.com/wp-content/uploads/2012/01/wlEmoticon-openmouthedsmile1.png" /> [Ok some of it, unfortunately my extensive research in the logo design process has been inedible, and more expensive than originally anticipated. If only I could pay designers in cookies… or mussels. Ha!]</p>
<p><a href="http://www.myrecipes.com/recipe/coconut-basil-steamed-mussels-10000001898543/" target="_blank">Coconut and basil steamed mussels</a> is a Cooking Light recipe I’ve had bookmarked since June 2009. Mussels are such a fun protein to make and healthy to boot! It’s <strong>high in protein, low in fat and calories</strong> and when made right – so <strong>juicy, plump and delicious</strong>. I also love how these little guys absorb whatever broth you cook them in. They turn into<strong> little sponges of flavor</strong>. Yum!! </p>

<p>I doubled the amount of mussels the recipe called for (they normally come in 2lb bags – why not cook the whole thing?) and added a few good handfuls of <strong>fresh baby spinach</strong> (together with the basil) for good measure. Adding baby spinach to pretty much everything is one of my favorite ways to sneak extra veggies in! The spinach soaked up some of the yummy broth as well. Awesome!</p>
<p>This broth was creamy and slightly spicy and had a bit of Thai flare. We loved it with <strong>big hunks of bread</strong> to soak up more broth. A quick, restaurant-worthy, <em>healthy</em> meal right at home! <img style="border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none" class="wlEmoticon wlEmoticon-redheart" alt="Red heart" src="http://www.healthyandsane.com/wp-content/uploads/2012/01/wlEmoticon-redheart.png" /></p>

<p>I know that January is a month of <strong>healthier resolutions</strong>. We’ve all used the excuse of the holidays to indulge in too many desserts, cheese and wine (You did, right? Don’t leave me here confessing to sins all on my own). The beginning of a new year is a good time to reassess what worked and didn’t the year before, to get a bit of a kick to recommit to old goals or start fresh with a “<strong>clean slate</strong>.” It’s like the ultimate “Monday.” I dig it.</p>
<p>And while I’m not really into New Year’s resolutions (at least not this year) in recent weeks <strong>my fire for healthy cooking and exercise has been reignited</strong>. And I’m hoping the newness of the year will keep it up. Even on days when “there is nothing in the fridge,” I keep at it. Last night the digging turned up a crazy delicious pasta dish, created from pantry staples and a few random bits in the fridge. I have an archive of recipes to share with you, but this one wins today.&#160; </p>

<p><strong>Pantry staples (and a few random bits) pasta </strong></p>
<p><em>Adopted from the <a href="http://www.amazon.com/EatingWell-Serves-Two-Healthy-Suppers/dp/0881507237/ref=sr_1_1?ie=UTF8&amp;qid=1325564366&amp;sr=8-1" target="_blank">Eating Well cookbook</a>, serves 4</em></p>
<p><u>Ingredients:</u></p>
<ul>
<li>8oz dry whole wheat pasta</li>
<li>4 slices bacon</li>
<li>2 garlic cloves, minced</li>
<li>2 cups spinach</li>
<li>15-oz can of diced tomatoes with chiles</li>
<li>Two 15-oz cans cannellini beans, drained and rinsed.</li>
<li>1/4 cup chopped kalamata olives</li>
<li>1/2 cup fresh basil</li>
<li>1 cup grape tomatoes</li>
<li>2T finely shredded pecorino cheese</li>
</ul>
<p><u>Directions:</u></p>
<ul>
<li>Boil pasta according to instructions on package</li>
<li>Fry bacon and blot on paper towels (reserve bacon grease).</li>
<li>Heat 1T of reserved bacon grease on medium heat, add garlic.</li>
<li>When garlic is golden brown, add cannellini beans, basil, spinach, diced tomatoes, olives and grape tomatoes and stir.</li>
<li>When the spinach has wilted, add cooked pasta, crumbled bacon and pecorino cheese.</li>
<li>Taste for seasonings (a little more salt or pepper may be needed) and enjoy.</li>
</ul>
<p>This was so quick and easy and the flavor blew us away. I love the smokiness of the bacon, the saltiness of the olives and the slight heat from the chiles in the tomatoes (if you just have diced tomatoes and want a bit of heat, add a sprinkle of hot pepper flakes). I’m adding the recipe to my <a href="http://blog.healthyandsane.com/favorite-recipes/" target="_blank">favorites list</a>!</p>

<p>So let’s talk about eating out. While I really love the whole process of preparing meals at home, from the menu planning to grocery shopping to cooking and finally eating my creation (best part when I see someone else enjoy my food as much as I do!), going out to eat is still one of my favorite ways to spend time with Adam, friends and family. Similarly to cooking at home, I love the whole <em>process</em> of searching for the perfect spot for the occasion, the anticipation of a great night out, then dressing up and finally experiencing the whole event. It is an event, isn’t it? From the atmosphere of the restaurant, to service to the wonderful food shared with lots of wine and laughs – there is so much to experience! There are nights and dishes I remember for years. They are special to me. Most of them I’d never dream of recreating but once in a while I eat something simple yet <em>perfect</em> and I vow to try creating a little <strong>restaurant meal right in my own home</strong>.</p>
<p>This is one of such meals.</p>

<p>This dinner was inspired by our favorite dishes from a spanish tapas restaurant, <a href="http://www.jaleo.com/" target="_blank">Jaleo</a>, on our <a href="http://blog.healthyandsane.com/2011/08/healthy-and-sane-in-washington-dc/" target="_blank">trip to Washington DC</a> over the summer. The place was recommended to me by several readers and <a href="http://twitter.com/#!/elinaholbrook">twitter</a> friends, so one random day, we decided to rest our feet and have a glass of sangria with a few apps at the bar. There was no planning – it was a spur of the moment decision when we stumbled upon the place. I think because we had no expectations, it was especially surprising how much we enjoyed the few bites we had that first visit. So much that we had to go back 2 days later and have a whole meal!</p>
<p>Although every single thing at Jaleo was fantastic, hands down are two favorites were <strong>pan de recapte con anchoa</strong> (traditional Catalan bread with peppers, tomatoes and salt-cured Spanish anchovies) and <strong>gambas al ajillo</strong> (the very famous tapa of shrimp sautéed with garlic). These are my versions of these dishes.</p>

<p>For the play on pan de recapte con anchoa, I actually started with my mom’s recipes for <a href="http://www.russianbites.com/perzzi-roasted-peppers-and-sinii-eggplant-salad" target="_blank">perzzi</a> (roasted peppers) and <a href="http://www.russianbites.com/perzzi-roasted-peppers-and-sinii-eggplant-salad" target="_blank">sinii</a> (eggplant/tomato spread) and layered them over <strong>fresh slices of baguette</strong>, topped with <strong>garlic-marinated anchovies</strong>. I find the salt anchovies to be very pungent. They are fantastic melted into sauces or whipped into dressings, but I prefer the marinated kind when eaten “straight up.” The anchovies seem to mellow out as the vinegar breaks down some of that intense fishiness.</p>

<p>Next up, I followed America’s Test Kitchen’s recipe for <a href="http://www.americastestkitchen.com/recipes/detail.php?docid=11801" target="_blank">Spanish-style garlic shrimp</a>. I love how garlic is used in three different ways in this recipe (to marinate the shrimp, infuse the olive oil and finally to cook with shrimp). I used a dried habanero (much spicier than the cascabel chile that’s traditional) so my shrimp also had a bit of a kick. We like it spicy in these parts <img style="border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none" class="wlEmoticon wlEmoticon-winkingsmile" alt="Winking smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/12/wlEmoticon-winkingsmile2.png" /></p>

<p>This turned out fantastic! It was hard to not soak up every morsel of that garlicky spicy oil with baguette slices. So simple yet so perfect. <p>A few weeks ago I received an email from Daria who does PR for <a href="http://www.nasoya.com/" target="_blank">Nasoya</a>. She also told me about some of their newer products, like the organic <a href="http://www.nasoya.com/products/tofu/sprouted-vac-pack.html" target="_blank">sprouted tofu</a> and <a href="http://www.nasoya.com/products/tofu/tofu-plus-firm.html" target="_blank">TofuPlus</a> which is fortified with additional vitamins, and offered to send me coupons to try them out. Of course I jumped at the chance (and asked for somethin’ somethin’ for you too!!).</p>
<p>I browsed through the Tofu U “cafeteria” section and found an interesting looking recipe for <a href="http://www.nasoya.com/tofu-u/tofu-recipe/crispy-tofu-tacos-with-creamy-lime-drizzle/">crispy tofu tacos with creamy jalapeno lime drizzle</a> and decided to give it a go.</p>

<p>This recipe was unusual to me because instead of flour, you covered the tofu pieces in <strong>cornstarch</strong> before stir-frying. I was really happy with the results, though – it created a <strong>real crust</strong> on each piece and the Worchester sauce gave it a lot of flavor!</p>

<p>So here is the deal. I want to <strong>bring some old favorites back</strong>. I want to share them with you again. I want you to SEE, not just imagine, how delicious they are. And then hopefully even more of you will be inspired to make them. I’m definitely having a lot of fun making them again!</p>

<p>Let’s start with a little <a href="http://blog.healthyandsane.com/2009/12/dinner-with-the-family-entertaining-part-ii/" target="_blank">flashback going back to December 2009</a>… when I had my parents and aunt from Russia over for dinner.&#160; When I told you that <a href="http://www.myrecipes.com/recipe/sweet-spicy-glazed-salmon-10000000549833/" target="_blank">this Cooking Light recipe</a> for <strong>sweet-spicy glazed salmon</strong> was a recent favorite. It comes together in less than 15 minutes and is certainly impressive and delicious enough to serve to company. The salmon gets a quick sprinkling of salt and pepper and then bakes for 10-12 minutes. In the mean time, you can work on the sweet and spicy glaze made of brown sugar, soy sauce, rice vinegar and mustard (I now use 100% dijon in place of Chinese mustard). The salmon is finished with a good slathering of the sauce. It’s shiny and sticky and finger-licking good.</p>

<p>Of course you’ll need a side dish for the salmon. May I recommend <a href="http://www.foodandwine.com/recipes/roasted-brussels-sprouts-with-capers-walnuts-and-anchovies" target="_blank">this Food &amp; Wine recipe</a> for <strong>roasted brussels sprouts with capers, walnuts and anchovies?</strong> [Originally found through <a href="http://www.thesweetslife.com/2011/10/roasted-brussels-sprouts-with-capers.html" target="_blank">The Sweets Life</a>] These babies are roasted at the same temperature and the dressing also contains mustard, which makes these two just meant for each other! I cut the oil in the dressing quite a bit and used a little less anchovies (PS – I hope you’re not scared of them, they are salty and just melt into the dressing. Don’t skip them!). This meal was so good that Adam broke the “no fish in the office” rule and took the leftovers (which were originally meant for me) to work for lunch the next day. He said it was worth the looks he got <img style="border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none" class="wlEmoticon wlEmoticon-winkingsmile" alt="Winking smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/11/wlEmoticon-winkingsmile1.png" /></p>

<p>I’m very seriously considering making these <strong>brussels sprouts for Thanksgiving</strong> this year. I loved how the sweet caramelized brussels sprouts were balanced by the salty/acidic dressing. Delicious!</p>

I like how much more vivid the colors are. People keep telling me to have fun “doing nothing” all day, but if you know me at all, you know that’s just not how I roll.&#160; For months (years?) I’ve had a million things I was hoping I’d have time or energy to do but never did. And now I feel like it’s my chance. I’ve been cleaning, scrubbing, planning, <a href="http://blog.healthyandsane.com/2011/11/so-i-did-a-little-shopping/" target="_blank">shopping</a>, <a href="http://www.russianbites.com/golubtsi-stuffed-cabbage-leaves" target="_blank">blogging</a>, <a href="http://www.twitter.com/elinaholbrook" target="_blank">tweeting</a>, <a href="http://www.facebook.com/healthyandsane" target="_blank">facebook</a>-ing (and apparently making up words)… and learning. I’m learning that there is a whole other world out there during the 9-5 time slot. A world where people move a lot slower, A LOT slower. Where housewives like telling you (a complete stranger!) all about how much money they spent decorating their house while trying to bargain with the sales clerk on the price of a picture frame (she didn’t budge). <p><strong>Weeknight light mac &amp; cheese</strong></p>

<p><u>Ingredients</u>: (serves 4)</p>
<ul>
<li>8 oz dry macaroni</li>
<li>12 oz can of reduced fat evaporated milk</li>
<li>3/4 cup 2% milk</li>
<li>1/4 teaspoon dry mustard</li>
<li>1/8 teaspoon garlic powder</li>
<li>Pinch of cayenne pepper</li>
<li>2 teaspoons of cornstarch</li>
<li>8 oz 50% light cheddar cheese, such as <a href="http://www.cabotcheese.coop/pages/our_products/products.php?catID=6" target="_blank">Cabot</a> – shredded</li>
<li>1 cup frozen peas</li>
<li>4 slices bacon (I used fresh bacon from Stillman’s which tasted more like pork tenderloin than smoky bacon… I think real cured bacon would be really nice here)</li>
</ul>
<p><u> Instructions</u>:</p>
<ul>
<li>Cook macaroni according to package instructions.</li>
<li>Fry bacon, then pat dry between paper towels and dice. Discard bacon fat.</li>
<li>Bring a mixture of evaporated milk, 1/2 cup milk, dry mustard, garlic powder and cayenne to a boil, then reduce to simmer.</li>
<li>Add in frozen peas.</li>
<li>Whisk cornstarch with the remainder of milk. Add to the evaporated milk + peas mixture.</li>
<li>Continue whisking until the sauce is thickened. Take off heat.</li>
<li>Whisk in shredded cheddar cheese, then macaroni. </li>
<li>Let the mac &amp; cheese rest for about 5 minutes so the sauce is absorbed into the macaroni.</li>
<li>Stir in bacon. Adjust for seasoning, if needed.</li>

<p>I was impatient so my first serving was a bit runny but still creamy and definitely plenty cheesy. The sauce really thickened up overnight so the leftovers were spot on.</p>

I hope you don&#8217;t roll your eyes because well, there certainly have been plenty of pumpkin recipes here on the blogosphere (and magazines and cooking channels). It seems like most of you have been quite obsessed. I&#8217;m banking on it because I have a sweet few recipes to share with you too. They are my<strong> first of the season</strong> (yup, just as the season is ending).</p>

<p>We&#8217;ll start with something a little more indulgent and quite special (scroll down for something healthier if you&#8217;ve had a little too much candy for Halloween) &#8211; <strong><a href="http://www.howsweeteats.com/2011/10/chewier-pumpkin-chocolate-chip-cookies-2-ways/" target="_blank">chewy chocolate chip pumpkin cookies</a> </strong>[made with pumpkin butter]<strong>. </strong>Just like Jessica, I&#8217;m not really into muffin top-like pumpkin cookies. I want softness in that chewy sort of way&#8230; the slightly underbaked and gooey, plump-cookie sort of way. <em>Does that even make sense?</em></p>

<p>See how plump these are? Don&#8217;t mistake this for having a muffin-like texture. These are melt-in-your mouth, buttery pillows of heaven. Bonus: Scoop the dough into little balls, then <strong>freeze</strong>. That&#8217;s how you get to enjoy freshly baked cookies any day in just 13 minutes of waiting time (and no dirty bowls).</p>

These were actually requested by Adam &#8211; the only time he&#8217;ll ever ask for anything-pumpkin (I may now have to add those cookies to the list. What do you think, Adam?).</p>

<p>He was asking for me to make <a href="http://blog.healthyandsane.com/2008/11/a-very-fall-day/" target="_blank">these muffins</a> (which apparently I made back in November 2008!!! and he&#8217;s still asking for them) but Tina&#8217;s recipe no longer exists. The key ingredient is definitely the peanut butter chips. Have you ever had them? The <a href="http://www.sunspire.com/products/peanut-butter-baking-chips" target="_blank">Sunspire peanut butter baking chips</a> have no junk ingredients and taste like mellow butterscotch kissed by peanut butter little candies. They are soft and melt beautifully. I&#8217;ve been scouting every Whole Foods for over a year to find them (I don&#8217;t know why they&#8217;ve become such a commodity!). <p>Anyways, back to the muffins&#8230; Tina&#8217;s &#8220;original&#8221; muffins were super moist and full of chips. I went with my <a href="http://blog.healthyandsane.com/2009/10/miracle-muffins-v8-soup-giveaway-winner/" target="_blank">go-to pumpkin muffin recipe</a> (by Ellie Krieger) which is very light and almost cupcake-like, reducing the brown sugar down to 1/2 cup and adding 1 cup of chocolate and peanut butter chips (combined). The result were these beautiful babies, which I dressed up for Halloween <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

The weekend is just around the corner for you too, so I wanted to share a quick and easy recipe with you before I shut my computer down for a few days.</p>

<p>A lot of buffalo chicken dip recipes call for canned chicken (eww) and butter (totally unnecessary). I came up with this on a whim the other day and it was <strong>the best buffalo chicken dip I’ve ever had</strong>. It’s not exactly health food but it’s just a little lighter.</p>
<p><strong>Ultimate healthified buffalo chicken dip</strong> (serves a crowd)</p>
<ul>
<li>2 poached chicken breasts, shredded</li>
<li>2 packages (8oz ea) neufchatel (low fat cream cheese), softened</li>
<li>1 cup low fat sour cream</li>
<li>3/4 cup <a href="http://www.franksredhot.com/products/hot-buffalo-wings-sauce" target="_blank">Frank’s RedHot buffalo wing sauce</a></li>
<li>1 teaspoon of garlic powder</li>
<li>1.5 cups shredded reduced fat cheese (I used 1/2 mozzarella, 1/2 cheddar), divided</li>
<li>Baby carrots and pita chips for dipping</li>
</ul>
<p>Instructions:</p>
<p>1. Preheat oven, or toaster oven, to 350*.</p>
<p>2. Mix all ingredients together, hold 1/2 cup cheese. The Kitchen Aid with a paddle attachment does an amazing job of creaming it all together. Super easy!</p>
<p>3. Transfer to 9&#215;5 loaf fan (or another baking dish), sprinkle remaining cheese over the top.</p>
<p>4. Bake for 15 minutes.</p>
<p>4. Broil for 1-2 minutes to get the cheese extra golden on top.</p>
<p>Enjoy!!</p>
<p>Creamy, buffalo-saucy, cheesy. Dig in!</p>
