			<content:encoded><![CDATA[<p><strong>Happy New Year!!!</strong> I have a <em>very</em> good feeling about 2012. It’s going to be a great one. For all of us. <img style="border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none" class="wlEmoticon wlEmoticon-openmouthedsmile" alt="Open-mouthed smile" src="http://www.healthyandsane.com/wp-content/uploads/2012/01/wlEmoticon-openmouthedsmile.png" /></p>
<p>I know that January is a month of <strong>healthier resolutions</strong>. We’ve all used the excuse of the holidays to indulge in too many desserts, cheese and wine (You did, right? Don’t leave me here confessing to sins all on my own). The beginning of a new year is a good time to reassess what worked and didn’t the year before, to get a bit of a kick to recommit to old goals or start fresh with a “<strong>clean slate</strong>.” It’s like the ultimate “Monday.” I dig it.</p>
<p>And while I’m not really into New Year’s resolutions (at least not this year) in recent weeks <strong>my fire for healthy cooking and exercise has been reignited</strong>. And I’m hoping the newness of the year will keep it up. Even on days when “there is nothing in the fridge,” I keep at it. Last night the digging turned up a crazy delicious pasta dish, created from pantry staples and a few random bits in the fridge. I have an archive of recipes to share with you, but this one wins today.&#160; </p>

<p><strong>Pantry staples (and a few random bits) pasta </strong></p>
<p><em>Adopted from the <a href="http://www.amazon.com/EatingWell-Serves-Two-Healthy-Suppers/dp/0881507237/ref=sr_1_1?ie=UTF8&amp;qid=1325564366&amp;sr=8-1" target="_blank">Eating Well cookbook</a>, serves 4</em></p>
<p><u>Ingredients:</u></p>
<ul>
<li>8oz dry whole wheat pasta</li>
<li>4 slices bacon</li>
<li>2 garlic cloves, minced</li>
<li>2 cups spinach</li>
<li>15-oz can of diced tomatoes with chiles</li>
<li>Two 15-oz cans cannellini beans, drained and rinsed.</li>
<li>1/4 cup chopped kalamata olives</li>
<li>1/2 cup fresh basil</li>
<li>1 cup grape tomatoes</li>
<li>2T finely shredded pecorino cheese</li>
</ul>
<p><u>Directions:</u></p>
<ul>
<li>Boil pasta according to instructions on package</li>
<li>Fry bacon and blot on paper towels (reserve bacon grease).</li>
<li>Heat 1T of reserved bacon grease on medium heat, add garlic.</li>
<li>When garlic is golden brown, add cannellini beans, basil, spinach, diced tomatoes, olives and grape tomatoes and stir.</li>
<li>When the spinach has wilted, add cooked pasta, crumbled bacon and pecorino cheese.</li>
<li>Taste for seasonings (a little more salt or pepper may be needed) and enjoy.</li>
</ul>
<p>This was so quick and easy and the flavor blew us away. I love the smokiness of the bacon, the saltiness of the olives and the slight heat from the chiles in the tomatoes (if you just have diced tomatoes and want a bit of heat, add a sprinkle of hot pepper flakes). I’m adding the recipe to my <a href="http://blog.healthyandsane.com/favorite-recipes/" target="_blank">favorites list</a>!</p>

<p>Anyways, I’m cool now and I want to tell you about the dinner I cooked for my<strong> dad’s birthday</strong> last weekend (sticking to <a href="http://www.healthyandsane.com/2011/06/my-30-by-30-list/">my 30 by 30 list</a> and hosting dinner parties left and right. haha)! His birthday happens to be on my wedding anniversary. Adam and I celebrated the night, just the 2 of us, but I had plans to make it up to my dad soon enough.</p>
<p><strong><em>When hosting a dinner party do you pick a theme or just go with delicious recipes?</em></strong> </p>
<p>I wanted to make sure this was really really delicious so for my main course I chose a recipe I’ve made (and loved!) before – <a href="http://www.healthyandsane.com/2011/05/welcome-back-summer-weather/" target="_blank">chicken thighs on the grill</a> (btw, I always tag <a href="http://www.healthyandsane.com/category/misc/favorite-recipes/" target="_blank">my favorite recipes</a> so you can find them easily… on the right hand side).</p>
<p>Next up were these lovely <strong>ravioli with prosciutto, sundried tomatoes, basil and mozzarella</strong> in Jamie Oliver’s <a href="http://www.amazon.com/gp/product/0786866179/ref=as_li_ss_tl?ie=UTF8&amp;tag=healandsane-20&amp;linkCode=as2&amp;camp=217145&amp;creative=399369&amp;creativeASIN=0786866179">The Naked Chef cookbook.</a> The pictures have been enticing me for weeks and a special birthday dinner seemed like the right time to break out my pasta roller! <p>The angel food cake meets Italian grandmother was so light and the perfect ending to our Italian feast. Adam asked that I add it to our rotation of desserts (which means I should start a rotation of desserts! Yessss). I’m adding more strawberries between each layer next time!</p>

<p>I’m going to pat myself on the back for picking the things I did to include on my “to-make” list because these are all kind of basic (almost <em>staples…</em> well maybe not marshmallows<em>) </em>that I’ve purchased numerous times pre-packaged yet had absolutely no clue about what goes in to them or how they become what they do.</p>
<p>Take <strong>gnocchi</strong> for example. I knew they were made of potatoes. Sometimes I’ve seen the whole wheat variety sold, sometimes the “fancy” sweet potato kind. But what else is in those babies… and how do potatoes (and flour? seriously I had no idea) turn into pillows of goodness? <p>All right, in case <em>you</em> have been wondering how gnocchi actually becomes gnocchi, here is how it went down for me. Upon <a href="http://boston2berkeley.wordpress.com/" target="_blank">Beth’s</a> recommendation, I used Heidi’s recipe for <a href="http://www.101cookbooks.com/archives/how-to-make-gnocchi-like-an-italian-grandmother-recipe.html" target="_blank">how to make gnocchi like an Italian grandmother</a> (who wouldn’t want that?!!)</p>
<p>All gnocchi is is potatoes, flour and eggs. It never seizes to amaze me how delicious and inspired things are created out of almost nothing. This is all you need to make gnocchi!!</p>

<p>SO, this is where I think I made a <strong>small mistake</strong>. I wasn’t ready for dinner quite yet so I covered this pan with a towel and went on to do some errands around the house for maybe an hour. Then I went to boil them!</p>

<p>They were really gooey when I went to pick them up. <em>Really </em>gooey. I’m guessing it was too hot in my apartment so they kind of melted. I think I should have put them in the fridge if I wasn’t going to cook them right away.</p>

<p>A few minutes of boiling produced very light and pillowy gnocchi though. I think we have a winner on our hands!!</p>
<p>In the meantime, I fried some <strong>pancetta</strong> and <strong>grape tomatoes</strong> and once they were all ready, added the boiled gnocchi to the pan to give them a quick sear. Some <strong>garlic scape pesto</strong> to finish and dinner was ready!</p>

Well, it&#8217;s true. I LOVE it. Unfortunately, I often get a little too ambitious/excited about all the delicious things I could be making, so I make a crazy long list and then don&#8217;t really follow through. I often get tired after a day of work or upset about something, and end up eating random stuff instead of following through with the plan.</p>
<p>This week, however, I was on a mission to finally make things that have been on my to-make list for AGES. I bought the ingredients weeks ago and this week was the week!!! <em><strong>Wanna see what I&#8217;ve been up to in my kitchen?</strong></em> Come, come!!</p>
<p>Jen posted about these <strong><a href="http://www.beantownbaker.com/2010/08/salmon-burgers.html" target="_blank">salmon burgers</a></strong> last August during her burger week and raved about them. I love smoked salmon and thought it was such a fun addition to the mix.</p>

<p>Unfortunately wild salmon is very lean and I overcooked these. They tasted like dry smoked salmon patties &#8211; the sauce was the only saving grace. I mixed greek <strong>yogurt with sriracha and diced grape tomatoes</strong>. They added some spice and freshness. <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>The next night I wanted to make something with goat cheese. I cooked some <strong>ww pasta, sauteed mushrooms and spinach</strong>, threw in some leftover <strong>lamb sausage</strong> and then topped it all with <strong><a href="http://pink-apron.com/2011/03/creamy-sun-dried-tomato-and-goat-cheese-pesto/" target="_blank">creamy sundried tomato and goat cheese sauce</a></strong>.</p>

<p>I did have some meyer lemons so <strong>meyer lemon cheesecake bars</strong> were born (I added a bunch of juice and zest and subbed agave nectar for honey to let the lemon flavor stand out).</p>

<p>Can you see how light these are? They taste decadent but also very airy unlike the more traditional dense cheesecakes. I really love this recipe!</p>
<p>Agave isn&#8217;t as sweet as honey so these weren&#8217;t sweet enough for my liking (and the meyer lemon flavor was still lost) so I drizzled some maple syrup over the bars once cooled. <p>I thought you could just throw everything in and bake, but I learned a lesson here. Yeah, someone didn&#8217;t read the instructions well! <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_eek.gif' alt=':shock:' class='wp-smiley' />  <strong>Add the dried fruit at the end </strong>- my beautifully sweet dried apricots turned into rocks!!! No worries, I picked them out and carried on with my newly established granola obsession.</p>

<p>Adam said it was <strong>the best granola he&#8217;s ever had</strong>!! I actually can&#8217;t choose between this one and Flour&#8217;s &#8211; both are fantastic. A little salty, crunchy, nutty. Yeah, I&#8217;m going to be honest &#8211; this granola has been enjoyed more often than not, straight out of the jar. And I&#8217;m ok with it <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' /> </p>

<p>Well, over 3 months later I finally made my very first batch of ravioli at home! Shannon was coming over to hang out so I put her to work as well. <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-winkingsmile" alt="Winking smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/04/wlEmoticon-winkingsmile1.png" /> It really is easy – I’ll show you! <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/04/wlEmoticon-smile.png" /></p>
<p>We made pasta dough out of <strong>150g </strong><a href="http://www.kingarthurflour.com/shop/items/king-arthur-italian-style-flour-3-lb"><strong>Italian 00 flour</strong></a><strong>, 50g white whole wheat, 2 eggs and a pinch of salt</strong>. You start by making a little well for the eggs (see above), and gently incorporating the eggs into the flour – one at a time.</p>

<p>Divide into little pieces, and cover under a damp (not wet!) towel.</p>

There is a <strong>knob</strong> on the right of the attachment – <strong>start with 1 (thickest) and work your way up to the thickness (</strong>or should I say thinness?)<strong> of preference</strong> (with a bit of trial and error, we learned that <strong>“5” was perfect for ravioli</strong>).</p>

<p>We made 2 different fillings – <strong>mashed potato and mushroom</strong> (Russian inspired) and <strong>shrimp, sundried tomato &amp; feta</strong>. Both were fantastic!!</p>
<p>I had this “fancy” ravioli mold which produced very pretty ravioli but was a pain! Here is what the process looked like – you could also just free style it (you’ll see below we switched to that method after a while).</p>

<p>Btw, if you have any extra dough after shaping your ravioli, you can combine all your scraps and run them through the machine again – you may just have another batch there!</p>
<p>Fresh pasta cooks very quickly. These were ready in 2-3 minutes in boiling water.</p>

			<content:encoded><![CDATA[<p>Having a day off (I’m off this whole week!) apparently does not mean that you will have plenty of time for things like blogging. Sorry for the delay of today’s post. I wanted to make sure to share last night’s meal with you though. I always say “better late than never!”… maybe ‘cause I’m always late. lol</p>
<p>SO, if you’ve seen my post on <a href="http://www.russianbites.com/">Russian Bites</a>, or my <a href="http://www.facebook.com/#!/pages/Healthy-and-Sane/173678705980159">facebook</a>/<a href="www.twitter.com/elinacooks">twitter</a> you may have known that I <strong>had my parents and parents in law over for dinner </strong>last night. It’s been long overdue and I’m really excited that we finally had a change to do it. It was really fun! So fun, in fact, that I totally forgot to take pictures of all the food (namely the appetizers) so I’ll you’ll have to use your imagination if you’d like to pretend you were at the <a href="http://www.healthyandsane.com/">Healthy and Sane</a> household last night.</p>
<p>This was the<strong> smoothest and least stressful dinner party</strong> I’ve ever had. Here is why!</p>
<ul>
<li>I took <strong>shortcuts</strong>! Pre-dinner nibbles included <strong>green olives marinated with lemons and garlic</strong><em> </em>(purchased from the <a href="http://www.wholefoods.com">Whole Foods</a> deli department), <strong>aged gouda</strong> (just cut up), <strong>mozzarella/grape tomato skewers</strong> (super simple – Adam assembled them!) and <strong>hummus with baby carrots and crackers</strong> (hummus was the only thing I made from scratch for the apps).</li>
<li>I <strong>made dessert the night before</strong> (I had to given the recipe, but I just LOVED not worrying about that course at all the day of the dinner).</li>
<li>Despite my overambitious self, I stuck to “just” <strong>one main course</strong> (which <strong>I’ve made before &lt;- I knew what to expect</strong>!!). I did make a side of greens, although I <strong>accepted help</strong> (my mom washed the escarole and helped me with dessert the night prior; Adam made the mozzarella/tomato skewers). Thanks guys!</li>
<li>I <strong>invited guests a few hours prior to dinner</strong> being served. This gave everyone time to chat, drink and munch… and gave me more time to prep (I always stress about having everything ready when people arrive! No need this time!!).</li>
</ul>
<p>With all the wine our guests brought in and additional desserts (see below), we certainly had no shortage of food and drinks. So here we go, last night’s (pictured) eats!</p>

<p>My father in law LOVES Italian and happens to be the pickiest eater of the bunch (although I think my mom sometimes tries to give him a run for his money <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_lol.gif' alt=':lol:' class='wp-smiley' />  ) so choosing an Italian main entrée was the easy choice. I decided that <strong><a href="http://www.healthyandsane.com/2009/01/im-a-spaz/">spinach, artichoke and feta stuffed shells</a></strong> was a fun and impressive enough dish for a family dinner. It fed a crowd too! I made 1.5 times the recipe and it made two large pans (we hardly finished one of them so there were plenty of leftovers… not complaining here <img style="border-bottom-style: none; border-right-style: none; border-top-style: none; border-left-style: none" class="wlEmoticon wlEmoticon-winkingsmile" alt="Winking smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/02/wlEmoticon-winkingsmile4.png" /> ).</p>

<p>This was carby, cheesy and comforting. A simple side dish of <strong><a href="http://www.healthyandsane.com/2010/02/breaking-in-the-kitchen/">escarole and pine</a> nuts</strong> (doubled) nicely broke out the richness of the main course.</p>

<p>This week I did something kind of fun. Remember <a href="http://cravingellieinmybelly.blogspot.com/"><strong>CEiMB</strong></a> <a href="http://healthyandsane.com/?s=CEiMB">Thursday posts</a>? Well obviously I&#8217;ve been a big slacker on that front but I still love Ellie and take inspiration from the CEiMB group and other Ellie recipes. This week I challenged myself to an Ellie recipe a day in honor of &#8220;my&#8221; week on CEiMB. I chose the recipe for the <strong>baked falafel sandwiches</strong> (<a href="http://www.foodnetwork.com/recipes/healthy-appetite-with-ellie-krieger-/baked-felafel-sandwiches-recipe/index.html">here</a>) that hopefully all the group members will be excited about making and will enjoy eating. <p>I remember seeing this recipe on an episode of Healthy Appetite some time last year. It looked so easy and the idea of baked falafel (instead of fried) really intrigued me. <em>Can it still taste good? <p>I followed the recipe for the falafel pretty closely, except of course omitted the onions. They came out flavorful and delicious although admittedly a lot drier than their fried counterparts (I&#8217;m assuming oil is usually used a lot more liberally in the &#8220;filling&#8221; too). The taste of cumin and coriander added decisively Mediterranean flavors. If I ever get a craving for falafel, I won&#8217;t hesitate to dig up this recipe again. By the way, Adam loved this <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>You may also notice that this is not exactly a &#8220;sandwich.&#8221; This is where I decided to add a little twist to the recipe. We had some fresh pizza dough in the freezer so I decided to make <strong>falafel flatbreads</strong> instead. I rolled out the dough and grilled it. The tahini sauce was transformed into a drizzle by a generous addition of non-fat yogurt and some lemon juice to cut the tartness. Some lightly dressed greens and fresh cucumbers and heirloom tomatoes from the farmer&#8217;s market completed the flatbreads. It was one delicious summer meal (don&#8217;t remind me that summer is almost over, ok? I&#8217;m in denial and I plan on staying there until meals like that can no longer be enjoyed out in the summer heat.)</p>
<p>So that was Monday. We &#8220;traveled&#8221; to Italy the following day. I actually decided to make a recipe I missed on CEiMB a few weeks ago &#8211; <strong>shrimp and liquine fra diavolo</strong> (recipe <a href="http://www.foodnetwork.com/recipes/emeril-lagasse/shrimp-and-linguine-fra-diavolo-recipe/index.html">here</a>). It got great reviews and this used to be my &#8220;go-to&#8221; meal at outings to Italian restaurants. I think I had a bad experience once and that kind of ended that trend. But no more, here is what Tuesday&#8217;s dinner looked like (what you don&#8217;t have a glass of wine mid-week with your dinner? You do? Ok, good! <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_lol.gif' alt=':lol:' class='wp-smiley' />  )</p>

<p>I actually put a little twist on this recipe as well. I decided to serve this with <strong>zucchini &#8220;pasta&#8221;</strong> instead traditional linguine the recipe calls for. I got this idea from an <a href="http://rhodeygirltests.com/2010/07/26/healthy-zucchini-pasta/">old post by Sabrina</a> &#8211; her pictures make it look like legit pasta, while mine were more like zucchini ribbons (btw, I tried the mandolin method and a vegetable peeler actually worked better &#8211; it created thinner strips).</p>

<p>By the time I was done with dinner, it was getting dark so I&#8217;m sorry for these blurry photos. I had to fight with lighting. But let me tell you &#8211; this was AMAZING. I can&#8217;t stop thinking about it. I used diced tomatoes with chiles, which added additional heat and the zucchini ribbons soaked up all the saucy goodness. They do NOT taste like pasta. I don&#8217;t even want to call them that. They are thin strips of zucchini, working in perfect balance with the spicy tomatoes, shrimp and garlic. I was lucky enough to score the leftovers and could not wait for lunch today. SO good.</p>
<p>Lastly, on this rainy Wednesday night, it was all about comfort food &#8211; lasagna. Well, technically &#8211; <strong>portobello lasagna rollups</strong> (recipe <a href="http://www.foodnetwork.com/recipes/ellie-krieger/portobello-lasagna-rollups-recipe/index.html">here</a>).</p>

<p>This was a bit more involved than I meant it to be for a weeknight meal but it was VERY much worth it at the end. We somehow ran out of spinach so I dug into my freezer and found some frozen asparagus. That was quickly &#8220;steamed&#8221; in the microwave and jumped into the rollups. I also bought baby bellas because they are cheaper than portobellos and had to be chopped anyway. Lastly, I used TJ&#8217;s organic tomato sauce instead of making my own. It&#8217;s my favorite sauce &#8211; it&#8217;s healthy, organic, delicious, costs next to nothing and takes no effort. 			<content:encoded><![CDATA[<p>I know I&#8217;ve been mentioning here and there that work has been busy lately. Well, basically July is going to be hell for me. I have more projects/reports than days left in the month and I&#8217;m hoping that somehow it all just clicks and I&#8217;m able to accomplish everything by the deadline. I will, however, have to put in extra hours. A lot of extra hours. Late nights at work means less time for cooking and exercising. The only problem is that I don&#8217;t feel well when these two things are not a part of my life and that actually impacts my performance in other areas&#8230; including work.</p>
<p>Obviously I&#8217;m going to eat (hopefully some super quick meals that are more &#8220;assembly&#8221; rather than &#8220;cooking&#8221; will still be satisfying) but exercise is the easiest thing to push off the schedule when life gets in the way. <strong>So how do you find time to exercise when it seems like there is no time to spare?</strong> My answer for now is going to be &#8220;<strong>You have to</strong> <strong>make it a major priority</strong>&#8220;. My deadlines are not for a few weeks but it&#8217;s a lot of work and I have to have the discipline to work with this in mind. The last few days may get tough, but until then I&#8217;m willing to do whatever it takes &#8211; that may mean waking up early on some days, or working until very late because I want to go to the gym during lunch. I also will try to increase the intensity of my workouts so that less time at the gym still provides me with a quick burn that I crave. Finally, that also means that some other things will have to suffer. I am sure my DVR will miss me dearly (or maybe not, I know I&#8217;ll miss it) and as previously mentioned, elaborately cooked meals will be out of the window for the next few weeks. Some healthy take-out once in a while will also give me a little extra time. Lastly weekend work will surely be required. It&#8217;s easy to get so stressed out about work that you don&#8217;t allow any time for other activities and burn out quickly, but I&#8217;m going to attempt to still take care of my body in the meantime. <em><strong>Do you have any other tips?</strong></em></p>

<p>Panza was a really great restaurant (casual, yet inviting, great service, delicious unpretentious food) and this dish was fantastic. I loved the fun shapes of the pasta and the chunky tomato ricotta sauce. If I go back there and order this dish again (very likely!), I&#8217;m going to ask for extra mushrooms.</p>

<p>After all this talk about finding time for exercise, I did in fact find some time for a <strong>bootcamp</strong> class tonight. I&#8217;ve gained weight recently and its impacting my performance at the gym but it&#8217;s not going to stop me from keep trying. In fact, I&#8217;m using it as a challenge to get back into it and get even better than I was before! <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':grin:' class='wp-smiley' /> </p>

<p>So yeah, I threw some of the leftover potatoes/peppers into the pan for some extra heft and carbs. I also pre-roasted the beets end of last week (sliced, at 350* for about 20 minutes). Tonight, I sauteed some beet greens in a sprayed skillet, then added 1/2 can of diced tomatoes, roasted beets and potato salad, cracked 2 eggs and finally threw a few pecans in. That was on the stove for a few minutes, then under the broiler for a few more. Done!</p>

Yes, many of us spend quite a bit of our time online (especially bloggers!) but for me the problem is that&#8230; <b>once I pop, I can&#8217;t stop</b>! <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  Okay, maybe that exact expression is more fitting for chips, but seriously&#8230; if I allow myself &#8220;just 1 minute&#8221; to check the email, several hours pass by and its way past my bedtime. I check an email &#8211; that leads to a website, or twitter&#8230; and you know where that gets you. Twitter is not exactly productive. <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_lol.gif' alt=':lol:' class='wp-smiley' />  I&#8217;ve been trying to set a strict &#8220;bed time&#8221; but it&#8217;s not working. <b><i>Anyone else is an Internet addict?</i></b> I know at least a few of you are. <p>So Wednesday was my first workout in a week. Yikes! <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_redface.gif' alt=':oops:' class='wp-smiley' />  I took a super hard spin class and vowed to never take such a long break from working out again. It was due to a combination of going away for the weekend and work being super busy. Yesterday, I went back for more &#8211; this time for an <b>abs + RIPPED class</b>. Basically a crazy awesome bootcamp that I totally thought I couldn&#8217;t handle but somehow came out alive out of. The instructor was making fun of me a bit because I kept screwing up. She knows I haven&#8217;t been there in a few weeks and we both saw the pretty obvious consequences of such actions. She&#8217;s out on vacation next week, but I am going to ace these bootcamp classes again. I used to be one of the best in the class. I want to feel super strong again!!</p>

<p>We had no produce in the house, which meant a quick trip to the farmers market was in order. Here are my 2 favorite booths at the Prudential Center farmers market (open on Thursdays only).</p>

<p>This is definitely one of my favorites at our local farmers markets. I love that the girl that runs it is very knowledgeable about their farming practices and chicken raising (they sell their own eggs &#8211; from range free chickens that have their beaks for only $3.50/dozen &#8211; that&#8217;s cheaper than organic eggs at a super market!!).</p>

<p>I also love that their gorgeous produce is significantly cheaper than anywhere else. I think they actually watch their competition and try to undercut it a bit. Hey works for me. It&#8217;s still not cheap (i.e. I know they are well paid) but it&#8217;s more affordable compared to others for sure.</p>

<p><b><font color="#206900">DINNER</font></b></p>
<p>How could I forget? <a href="http://cravingellieinmybelly.blogspot.com/">CEiMB</a> meals are back! This week&#8217;s dish was p<b>enne with roasted tomatoes, garlic and white beans</b> (recipe <a href="http://www.foodnetwork.com/recipes/ellie-krieger/penne-with-roasted-tomatoes-garlic-and-white-beans-recipe/index.html">here</a>). I got the tomatoes and basil at the farmers market for it so I felt it still utilized some local produce. I like really centering my meals around that.</p>

<p>This took quite a bit of time to make (not active time, just waiting for the tomatoes and garlic to roast) and I&#8217;m not sure that it was worth it. Maybe I overcrowded my tomatoes (I nearly double the amount based on reviews online) but they kind of came out stewed rather than roasted. This was a little on the bland side (again, maybe I should have doubled the garlic and oil too to compensate for the extra tomatoes?). We enjoyed it but I won&#8217;t be making it again.</p>
