			<content:encoded><![CDATA[<p>I’d like to think I’m pretty mature for my age and for the past few weeks I’ve been saying that I don’t feel like I’m a 20-something anyway so might as well make it official. Yet last night at 11:35pm when I realized that I was minutes away from turning THIRTY, all of a sudden it hit me. I’m going to be officially an adult. Twenty nine sounds kind of like 26, yet 30 sounds nothing like 29 and more like 35. It’s a huge difference. I guess I’m really a woman now, no longer a girl (does that sound like a Britney Spears song to anyone, or am I aging myself here? lol). Despite a mini freak-out in my head every time I think about being 30, I am rationally completely ok with this. I <em>am</em> an adult. I own <a href="www.satisfiedcravings.com">my own business</a> that I built from nothing for goodness sake; I have an amazing husband, a great condo and really a lot of accomplishments to be proud of. So I’m celebrating today by working (because I love my job and I made it happen!!!), working out (because taking care of my body = taking care of me) and then enjoying a crazy awesome chef’s tasting dinner at <a href="http://www.craigieonmain.com/">Craigie on Main</a> that Adam is treating me too. Hey, can a <em>twenty</em> one year old do that? It was one hefty list and I got through most of it (and I’m ok with whatever I didn’t get to – I’m sure in my thirties I’ll learn even more about prioritizing in life and letting go of perfection). <p>Last but not least – <em>what’s a birthday celebration without something sweet?</em> It’s spring so I’m sharing this<strong> light <a href="http://www.myrecipes.com/recipe/strawberry-lemon-shortcakes-50400000120723/">strawberry lemon shortcake</a></strong> dessert. I made it a few weeks ago for a spring-themed dinner with <a href="http://www.tri2cook.blogspot.com">Shannon</a> and <a href="http://cakebatterandbowl.com/">Kerstin</a>. It was light and refreshing and everyone really enjoyed it (including myself). Strawberry shortcake is actually one of Adam’s favorites so I know I’ll be making it again this summer with local strawberries. </p>

<p>Want an example? Let’s do something easy, like working out (I have a feeling a lot of you could relate!). I plan on working out daily (actually 6 times a week) but sometimes I don’t feel like doing it at the convenient time… or I start getting nervous about all those pull-ups P90X loves so much, so I tell myself I’m hungry and should eat first. Of course that follows my the need to digest before I can get to it. I tell myself I have the whole day to do it. <p align="left">So I realized on Monday that I need to whip my ass into shape and <strong>get organized</strong>! Because besides all the things my business requires, I have a personal life too… with responsibilities and a social life, all of which require some juggling. <img style="border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://www.healthyandsane.com/wp-content/uploads/2012/02/wlEmoticon-smile1.png" /> On the personal front, <strong>my 30th birthday is coming up</strong> and that means it was time to revisit <a href="http://www.healthyandsane.com/2011/06/my-30-by-30-list/">my 30 by 30 list</a>. On this lovely list, I saw the goal of <strong>making and blogging about 25 new Russian recipes</strong>. And since I’m still 15 recipes short (with the last Russian recipe posted over 2 months ago!), I’ve got some serious catching up to do!! On the calendar a new weekly Russian recipe went immediately. It’s now an appointment I must keep.</p>

<p align="left">There was no way around it. I had to whip something delicious (and Russian) right away – a treat I used to enjoy as a kid – <strong>shokoladnaya karthoshka</strong> (translation: <strong>chocolate potato</strong>… yeah). I’ve <a href="http://www.russianbites.com/chocolate-sausage-shokoladnaya-kalbasa" target="_blank">written about this before</a> but Russian have this weird obsession with trying to shape foods into strange things (examples include <a href="http://www.russianbites.com/chocolate-sausage-shokoladnaya-kalbasa" target="_blank">chocolate sausage</a>, <a href="http://www.russianbites.com/black-poodle-cake" target="_blank">black poodle cake</a>, <a href="http://www.russianbites.com/gorka-little-hill-cake" target="_blank">little hill cake</a>… and now <strong>potatoes</strong>!). I suppose out of those examples, potatoes seem almost normal. But have no fear, they always taste amazing.</p>

<p align="left">These babies are made of milk, sugar, butter, cacao and crushed cookies and walnuts, creating <strong>fudgy</strong> little balls of goodness…which you can choose to shape into mini potatoes, or not. <p>What, you’re still trying to keep cookies out of your house as part of your New Years resolution to lose a few pounds? I have 2 things to say about that.</p>
<p>1. Are there really people out there that still remember their New Year’s resolutions on January 30? I’m serious. Are there? I can’t seem to remember mine. Sad truth.</p>
<p>2. If you make these cookies, you can taste 1 or 2… and then <strong>gift</strong> them. Trust me – the recipient will very happy. Very very happy. And making your friends even better friends this year is a really good thing to add to your resolutions.</p>

<p>A few weeks ago it was my friend Katy’s birthday and I was trying to figure out the perfect gift for her. She’s a doctor so the girl is pretty much living in the hospital. I wanted to give her something that would relax her on some especially exhausting day. Since my mind always goes to food, I thought that maybe <strong>baking cookies</strong> would be a nice activity for such a day (truth be told, on days like that I prefer to mindlessly shove cookies into my mouth until I pass out. Slowing down and actually baking some is a way better approach. I think Katy agreed!). Katy rarely has time to go grocery shopping so I thought a <strong>cookie mix</strong> would be a good compromise – homemade cookies, homemade taste – a lot less measuring and planning necessary. Again, win-win.</p>

<p>So I researched and researched. And I found this guide to <a href="http://bakedbree.com/oatmeal-peanut-butter-jar-cookies-week-8-of-12-weeks-of-christmas" target="_blank">oatmeal peanut butter jar cookies</a>. They looked perfect!</p>

<p>Of course I wanted to bake a test batch and also to give some to Katy together with the mix so she wouldn’t need to work for her cookies right away. <img style="border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://www.healthyandsane.com/wp-content/uploads/2012/01/wlEmoticon-smile3.png" /></p>

<p>[Side note: I tried baking them on an ungreased cookie sheet and on a silpat. The results were identical!]</p>
<p>They came out even better than expected!! They were soft and a little gooey on the inside, yet hearty with the addition of oat). And of course the <strong>mini peanut butter cups</strong> (from Trade Joe’s) made these guys extra special. Everything is better with chocolate! <img style="border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none" class="wlEmoticon wlEmoticon-redheart" alt="Red heart" src="http://www.healthyandsane.com/wp-content/uploads/2012/01/wlEmoticon-redheart1.png" /></p>

Honestly, I couldn’t be more proud of myself. The gift turned out SO CUTE!!</p>

<p>Now that I know how easy it is, there will be lots and lots of toffee in my future. And the future of my family and friends. Prepare yourself peeps. <p>So the toffee making process was born from the desire to make the <a href="http://www.foodandwine.com/recipes/chocolate-almond-saltine-toffee" target="_blank">chocolate almond saltine toffee</a> recipe from Food &amp; Wine. I’ve had saltine bark before (a.k.a crack) but this was my first time making my own. Toffee is basically butter (lots of it), sugar (yup, lots of it too), and corn syrup boiled together until it reaches 300* (a candy thermometer is very key here!!). Once these 3 simple ingredients turn into a golden brown syrupy goodness, you poor it into a container (in this case, over saltine crackers actually) and then cool it. After 15 minutes in the freezer, you have a sweet crunchy candy. Man, it’s good!</p>

<p><u><em>Fun fact</em></u>: Our wedding favors were <a href="http://www.harborsweets.com/Our-Signature-Sweet-Sloops/departments/1/" target="_blank">sweet sloops</a> which are little sailboat shaped toffee candies dipped in i2 kinds of chocolate and pecan crumbs. Awesomeness in a pretty package. So are these:</p>

<p>So let&#8217;s talk pumpkin for a minute, shall we? I hope you don&#8217;t roll your eyes because well, there certainly have been plenty of pumpkin recipes here on the blogosphere (and magazines and cooking channels). It seems like most of you have been quite obsessed. I&#8217;m banking on it because I have a sweet few recipes to share with you too. They are my<strong> first of the season</strong> (yup, just as the season is ending).</p>

<p>We&#8217;ll start with something a little more indulgent and quite special (scroll down for something healthier if you&#8217;ve had a little too much candy for Halloween) &#8211; <strong><a href="http://www.howsweeteats.com/2011/10/chewier-pumpkin-chocolate-chip-cookies-2-ways/" target="_blank">chewy chocolate chip pumpkin cookies</a> </strong>[made with pumpkin butter]<strong>. </strong>Just like Jessica, I&#8217;m not really into muffin top-like pumpkin cookies. I want softness in that chewy sort of way&#8230; the slightly underbaked and gooey, plump-cookie sort of way. <em>Does that even make sense?</em></p>

<p>See how plump these are? Don&#8217;t mistake this for having a muffin-like texture. These are melt-in-your mouth, buttery pillows of heaven. Bonus: Scoop the dough into little balls, then <strong>freeze</strong>. That&#8217;s how you get to enjoy freshly baked cookies any day in just 13 minutes of waiting time (and no dirty bowls).</p>

<p>Now onto something a little healthier &#8211; <strong>chocolate and peanut butter chip pumpkin pie muffins</strong>. These were actually requested by Adam &#8211; the only time he&#8217;ll ever ask for anything-pumpkin (I may now have to add those cookies to the list. What do you think, Adam?).</p>

<p>He was asking for me to make <a href="http://blog.healthyandsane.com/2008/11/a-very-fall-day/" target="_blank">these muffins</a> (which apparently I made back in November 2008!!! and he&#8217;s still asking for them) but Tina&#8217;s recipe no longer exists. The key ingredient is definitely the peanut butter chips. Have you ever had them? The <a href="http://www.sunspire.com/products/peanut-butter-baking-chips" target="_blank">Sunspire peanut butter baking chips</a> have no junk ingredients and taste like mellow butterscotch kissed by peanut butter little candies. They are soft and melt beautifully. I&#8217;ve been scouting every Whole Foods for over a year to find them (I don&#8217;t know why they&#8217;ve become such a commodity!). <p>Anyways, back to the muffins&#8230; Tina&#8217;s &#8220;original&#8221; muffins were super moist and full of chips. I went with my <a href="http://blog.healthyandsane.com/2009/10/miracle-muffins-v8-soup-giveaway-winner/" target="_blank">go-to pumpkin muffin recipe</a> (by Ellie Krieger) which is very light and almost cupcake-like, reducing the brown sugar down to 1/2 cup and adding 1 cup of chocolate and peanut butter chips (combined). The result were these beautiful babies, which I dressed up for Halloween <img src='http://blog.healthyandsane.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>Sometimes the meals are incredible but the pictures just don’t do it justice. I’m sure every food blogger in the world can empathize with that. You want so badly for the picture to make the reader drool. To make <em>you</em> wish you still had some leftovers to devour. Pictures really are worth 1,000 words. They are powerful.</p>
<p>Sometimes the stars align and <a href="http://blog.healthyandsane.com/2011/09/new-and-old-favorite-recipes/" target="_blank">your favorite meals accomplish just that</a> (that chocolate chip cookie picture even <a href="http://www.tastespotting.com/profile/healthyandsane/submissions/1" target="_blank">got accepted</a> by <a href="http://www.tastespotting.com/" target="_blank">Tastespotting</a>!!) Other times the lighting is perfect but <strong>the dish is <em>just okay</em></strong>.</p>

<p>Adam and I went <strong>peach picking</strong> a few weeks ago and I could not be more excited to make all sorts of peach goodies with our 10lbs of local peaches. Making a pie is one of those things I have yet to master (last time I attempting this was back in <a href="http://blog.healthyandsane.com/2009/11/thanksgiving-day-2009/" target="_blank">2009 for Thanksgiving</a> &lt;—whoa, I look different. Also, the perfect example of unfortunate picture quality of delicious food) so I decided to that a peach pie was the perfect little project!</p>
<p>I used Joanne’s recipe for a <a href="http://www.joanne-eatswellwithothers.com/2011/08/recipe-peaches-and-dream-pie.html" target="_blank">peach dream pie</a> but used a crust recipe I got from a pie making class I took at the <a href="http://www.thebrooklynkitchen.com/web-store/index.php?c=1" target="_blank">Brooklyn Kitchen</a> this past summer. The crust came out flaky and delicious but the <strong>filling was pretty soggy</strong>. Here is the deal: I have no idea what went wrong since I’m not really a pie-making expert. <strong><font size="3">I need your help!!</font></strong></p>
<p><em>Do fresh peaches have too much moisture? Should I have made a lattice top to let some of the moisture escape? Was the yogurt based filling (mixed with the peaches) too wet to begin with? Should I have cooked it somehow prior so that it baked better? Should I have cooked the pie longer?</em> I was scared the crust would burn on the bottom. <em>Any other suggestions?</em> I’m totally clueless about this stuff!</p>
<p>I sliced this pie the day after making it and was disappointed with the texture but the <strong>taste was fantastic</strong>. The yogurt mixture baked into something resembling a light cheesecake (mmm). It was even more delicious with a scoop or 2 of vanilla gelato! <img style="border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://www.healthyandsane.com/wp-content/uploads/2011/09/wlEmoticon-smile2.png" /></p>

As someone known to live in the black &amp; white world, I’m either not into cooking at all (bring on snacks, takeout and meals out!) or trying to make as many recipes as humanly possible in one night and/or weekend. I rarely, <em>very rarely</em> repeat recipes. That gives me the ability to test out more of the inspiring recipes I am constantly exposed to. The flip side, of course, is that those old favorites get forgotten. And it’s a shame. <p>I made 2 loaves of this bread last weekend and have been enjoying a slice (or 2) each morning with some Greek yogurt and a cup of coffee. I can’t imagine a better breakfast to wake up to! This bread/cake is slightly sweet, moist and full of cinnamon flavor. And who doesn’t love hidden veggies for breakfast?</p>

<p>In the perfect world, I’d start my morning with the above zucchini bread and have these <strong><span style="color: #008000;">grilled pork chops with peppers and capers</span></strong> from Mario Batali’s <a href="http://www.amazon.com/gp/product/0061450979/ref=as_li_ss_tl?ie=UTF8&amp;tag=healandsane-20&amp;linkCode=as2&amp;camp=217145&amp;creative=399369&amp;creativeASIN=0061450979">Italian Grill cookbook</a><img style="margin: 0px; border-style: none !important;" src="http://www.assoc-amazon.com/e/ir?t=&amp;l=as2&amp;o=1&amp;a=0061450979&amp;camp=217145&amp;creative=399369" border="0" alt="" width="1" height="1" />since these were <strong>the best pork chops I’ve ever made</strong>!!</p>

<p><strong>The secret is brining</strong> the pork chops overnight (actually since salt is a preservative, I left them in the brine for a few days since I was too busy to cook – extra bonus points for ease!). <strong><em>You know how salt makes you retain water and bloated?</em></strong> Well brining does the same for meat. The water retention makes them <strong>super juicy</strong>!</p>

<p>These peppers with capers were fantastic as well – smoky and briny. Yum! And no, these aren’t onions – they’re purple peppers from the farmers market. Cool, right? I have not made one thing out of that cookbook that I wasn’t completely head over heals for. LOVE.</p>

<p>How about something packed with <strong>veggies</strong> for dinner? When I saw Ranjani blog about this <strong><a href="http://4seasonsoffood.blogspot.com/2011/09/grain-salad-with-roasted-corn-and.html" target="_blank"><span style="color: #008000;">grain salad with corn and poblano peppers</span></a></strong>, I knew those wheat berries all the way in the back of my pantry had to come out of hiding.</p>

<p>I went light on the olive oil, used goat cheese instead of queso fresco (when is goat cheese <em>not</em> the way to go? <em>amiright</em>??), added chickpeas for extra protein… and apparently forgot the toasted pumpkin seeds. Oops. (I didn’t miss them though)</p>

<p>I loved the chew from the wheat berries, the sweetness of the corn, spice from the 2 kinds of chili peppers and the wonderful garlic infused olive oil dressing the grains. It’s fantastic room temperature but even better warmed (the goat cheese gets all melty and seductive. Do it!)</p>
<p>Oh and as proof that I’m committed to reinstating some old favorites – here is an oldie but goodie. <strong>My favorite <a href="http://blog.healthyandsane.com/2010/08/bbq-time/" target="_blank"><span style="color: #008000;">chocolate chip cookies</span></a></strong>. 			<content:encoded><![CDATA[<p><strong><em>Are you one of those people that’s talking and eating fall foods already?</em></strong> STOP IT. It’s still summer. I can’t bear it. You’re making me sad, and that’s just not nice.</p>
<p>I am, however, very much aware of the fact that summer is going to end very soon (partially because I keep seeing everything-fall). I wish it was summer all year long (clearly I should have thought of that before buying a condo in New England!)… but since it won’t be the case, I’m savoring every last moment of it. I try to spend as much time as possible outside when things like rain and/or hurricane don’t get in the way. And I’m eating fresh summer produce like it’s going out of style… err season.</p>

<p>I save hundreds of new recipes every week and it’s always so exciting when I finally make one of them (instead of finding a brand new one right before grocery shopping… I know, that’s just silly yet I do it far too often). This recipe from the July 2009 issue of Cooking Light for <strong><a href="http://www.myrecipes.com/recipe/berry-peach-cobbler-with-sugared-almonds-10000001906395/" target="_blank">berry-peach cobbler with sugared almonds</a></strong> I’ve had saved since… well, July 2009. I’m sorry I’ve waited this long because I’m honestly obsessed.<strong> It’s the best summer dessert</strong> a girl could ask for. And it’s <strong>easy</strong>. And <strong>light</strong>. <p>I made this last night, right before getting an email from my girl Kelsey at <a href="http://www.stonyfield.com/" target="_blank">Stonyfield</a>, reminding me to host a giveaway for you guys <em>since summer is about to end</em> (here we go again…). And what do you know, I just happened to be eating this cobbler with <strong>Stonyfield fat free frozen yogurt…</strong></p>

<p>It’s good stuff. Super creamy. Honestly I would have never guessed it was fat free (I actually hesitated before buying it because I saw that it was fat free, but decided to give it a god anyway because I love Stonyfield products). Of course I did have it with this sick cobbler… mmm.</p>

<p>So quickly about this recipe. I used <strong>half the sugar</strong> the recipe called for and it was still very sweet (my fruit was incredibly sweet – so that was probably why)… I would even use less sugar next time if my fruit is at its prime again. I also used <strong>whole wheat pastry flour</strong> instead of all purpose. I would do this again – the topping was buttery and flawless. Loved the candied almonds too. Seriously, I need to stop talking about this cobbler before I go back to the kitchen for more…</p>
