Hi friends, how’s life? Did you watch the Boston Marathon? I’m always so proud that this amazing race is in my city. And since I live very close to the finish line, I always get a little emotional seeing all the runners. I know how close they are to this incredible accomplishment and I’m so so excited for them!
Anyways, the marathon was the highlight of my week so far but the rest of the week as always revolved around food. Since I do a lot of recipe testing for my express lunch time lessons, I wanted to share one of my favorite quick and cheap recipes that’s perfect for lunch or a casual dinner – an egg salad BLT. This recipe was originally featured in Best of Cooking Light and it was love at first bite. I adore how light yet creamy the egg salad is, and the addition of lemon zest really brightens it up. Also, I’ve used nonfat Greek yogurt in place of sour cream on many occasions and it works wonderfully.
Side note: Martha Stewart’s method for hard-boiled eggs creates perfect eggs every time.
The best part? The contrast between creamy eggs, juicy tomatoes and crispy, salty, smoky bacon. Oh yes!

This sounds great! More interesting than egg salad or a BLT on its own. We definitely do things like quesadillas and grilled cheese for quick cheap eats.
Paninis stuffed with leftovers are always a go-to. Also, eggs combined with anything I have in the fridge–cheese, zucchini, tomatoes, potatoes, ham…all easy and cheap!
I’ve been eating eggs a lot lately. I do the Alton Brown oven bake method for hard boiled eggs. Have you tried it? Super easy!
No, I’ve never heard of it. It’s pretty interesting but I like that the Martha Stewart method only takes about 15 mins.

Yup, bacon pretty much makes everything better (except for sweets, I’m not a fan of bacon desserts).

I had forgotten how much I really love bacon until this past weekend. I had a bacon, avocado, and turkey sandwich that was just ridiculously good!

Lately I’ve been enjoying making baked versions of chile rellenos. I stuff mine with veggies, brown rice, cheese and chicken sausage and then do a veggie-laden sauce on top. So delicious. But you’re right, who doesn’t love bacon on anything. I have to admit I’ve never been a huge egg salad person but now I’m thinking I should try it again.

marathon monday is one of the things that I miss most about Boston…and one of the reasons I want to move back, like…yesterday. God I miss that city.
This sandwich sounds awesome! I think the key to a good sandwich is having lots of different textures and flavors and this has it all going on!
I love these. If you have a ‘My Friends Place’ deli in your area, they serve an egg salad blt and it is AWESOME!! I mean the bomb…. Get it on wheat bread, non toasted or just lightly toasted. It’s what’s up!
