Sometimes 1 cupcake turns into 5… and with that comes food guilt.
Yesterday I’m happy to say this was not the case. There was a bit of “tasting” during the making of the cream cheese frosting…
… but then I was content with just 1 cupcake. One guilt-free pumpkin cupcake with a cinnamon cream cheese frosting.
And that’s why diet free living is a worthy goal!
PS – I don’t like any cupcake places in Boston (except for Mix Bakery which is delivery only) so if I have a serious craving, I have to make them (bringing the rest to work today). What’s your favorite cupcake recipe?? Maybe I’ll recreate it when a craving hits again

So happy for you! I think it is really hard to have just one of anything, but it feels so good when you can do that and enjoy. I love pumpkin cupcakes, especially with cream cheese frosting!

Those look delicious!!! My favorite cupcake recipe is for black bottom cupcakes. There’s nothing like a rich, chocolate cupcake combined with a layer cream cheese!

These look so pretty! I always wondered about Sprinkles’ mixes…. I just made a cupcake with 3 kids of alcohol in it, which I’ll be posting soon. I’ve made A LOT of cupcakes in my day and they might be my favorite yet

Best cupcake recipe ever… chocolate cake with peanut butter cream cheese frosting over at Smitten Kitchen. Of course she made it into a cake and I did cupcakes, but we all know cupcakes are superior because of the icing to cake ratio, right?
Cupcakes are also way easier to make the cake.

I left the ganache off the cupcakes to save a step, but I have actually made the whole cake once as well and if you make the cake, don’t skip the ganache!
I’m SO impressed… do you have any tips? I’m going to a cupcake baking class on Friday and I’m REALLY nervous that I’m going to overdo it. (It’s one of the main reasons that I don’t bake)…
and apparently they’re opening a Sprinkles in NYC next month! after years of just using the mix, I’m so excited to try them!
Lauren – it’s definitely more tough some days. I ate a solid meal, then reminded myself that overeating dessert just makes me feel sick and uncomfortable. And that I would enjoy another one a whole lot more the next day. I think it’s key to give yourself full permission to have them the next day instead of trying to polish them off so that you can get back to being “good” the next day (that’s what often happens to me… I try to eat the temptation right away so that it won’t tempt me tomorrow. Not the smartest idea!!). Let me know how it goes

Ok I am SO weird. I’m not really the hugest cupcake person, primarily because I am not such a huge fan of frosting. That said, my good friend makes a brunt sugar frosting that is amazing.
This reminds me how much I miss pumpkin!! I think it needs to make a reappearance in my meals very soon

These look great. I think the best cupcakes I’ve ever had are the Barefoot Contessa’s coconut cupcakes with cream cheese icing and coconut. They are heavenly!
