I stayed up way past my bed time last night, trying to make some vacation plans. I thought this post on my recent beer adventures would keep you entertained, but apparently you’re not beer fans?? 😕 Anyways, back to vacation plans… the last vacation Adam and I took was in October, and the one before that was a year ago. We are definitely overdue for one! We started with planning a trip to San Francisco, realized our miles cannot be used for a trip this soon, and switched gears (we’ll go to San Fran in the summer instead). How nice would it be to just relax on the beach with nothing else to do? I don’t remember the last time we did this. Maybe never. The sound of a Caribbean vacation seemed more and more appealing as we did more research… except it’s expensive! At the end, more research needs to be done so we can find a good deal, but I cannot wait. A Caribbean vacation may also just be the kick in the butt that I need to get back on the healthy eating wagon. The new kitchen is helping with that as well. 😉 I’ll keep you guys posted.

Lunch was SO good! I go home for lunch on Mondays… love that! I just threw a bunch of frozen and fresh veggies + cooked wild rice + shrimp in the wok and voila – delicious lunch!

Stir fry with cauliflower, broccoli, red pepper, carrots, wild rice, shrimp with Jenna’s sesame sauce + sesame seeds

I am once again obsessed with KIND bars. I need to stock up. These bars are a little too sweet but the whole nuts are the best. This bar had whole almonds and macademia nuts. I’m nuts for nuts! 😆



I went back to one of my favorite classes at the gym after work – Rack it Up. It’s basically Body Pump/Group Power with a different name, and I LOVE this class. It’s been forever since I’ve been but I was able to lift the same weight as before (surprised myself actually!). The only thing was my legs. I used to lift 53lbs (includes 3lbs for the weight of the bar), but yesterday 33lbs almost instantly gave me leg cramps. I went down to 28 for the lunges track and still my legs were shacking. I hope I can run today! Anyways, I felt super strong and find these types of classes very inspiring. The guy next to me said he loves when I come because I can lift more than any of the guys (that included him, btw). Haha, love that! 😆

+ an orange and a zbar. I’m going to try to start “closing the kitchen” after dinner + dessert (if I need it). All these snacks add up!

    i am so insanely jealous you get to go home and whip up delicious lunches for yourself.
    i think if i could go on vacation anywhere ( let’s just say that time and money are not an issue) i think i’d do a hiking/ exploration type thing maybe in south east asia. or australia. ooo maybe india?
    or how about a yoga retreat? you can have the beach and get some awesome massage/ food/ relaxation in as well 😀
    ok looks like i’m overdue for a vacation too 😉

    I love short vacations — they are less expensive, use up less time at work, and you can fit more of them in during the year! I’m thinking the same thing you are…last year I took a big trip, so this year I’m hoping for a few small ones. Good luck with your planning :)

    I took a smaller vacation last year to Aruba- it wasn’t too expensive. There are always deals on travelzoo for $600-800, which is fantastic. I’ve looked into a weekend in the Bahamas before, it seems like a great deal.

    My favorite place to go away for the weekend is Maine, but not this time of year! Can’t wait for my vacation this Spring :-)

    I have no doubt you can find a great deal to the Caribbean! I would also consider Playa del Carmen – we loved it there, perfect balance of beach and activities.

    I highly recommend the Caribbean, particularly St. Thomas and Nassau (but not Paradise Island; it gets old/boring quickly). The Cayman islands are gorgeous, and Puerto Rico is at the top of my close-and-accessible list.

    We’ve been trying to plan a vacation before we have the baby but I’m still sick and don’t want to go anywhere til I know I won’t be!

    I’m dying to go to San Fran as well! But a warm beach sounds perfect right about now. I think Miami or an island would great for just a few days…I get bored fast, but 3 days on a beach sounds incredible. Glad your enjoying the new Kitchen!! I know I would! That lasagna looks amazing, plus its always the best leftovers too.

    If I have only 3-4 days off I would go to Boston! 😉 No joke… :p Boston is a nice city, or New York. I went last year at this exact time of the year. But having a little more days off… I’ll go somewhere warm. In fact I am going to Mexico (Mayan Rivera) in two weeks… can’t wait! :)

    Vacation sounds lovely… *sigh* Ryan and I both have the week of next week, but we’re doing a “stay-cation”. We thought about going camping, but the weather isn’t as nice as we had hoped. No 20 degree nights in a tent for me, please :)

    San Francisco is probably my second favorite city ever (London being the first – guess I like gloomy cities). It is gorgeous there! It would be great in the summer since the temps are pretty reasonable year-round. Of course the beach and Caribbean sound heavenly too. I’ve been twice, on cruises, but just being on the beach sounds even better. Be sure to take lots of pics either way so I can live vicariously through you; it looks like it will be a while before we go anywhere exciting.

    If I could go anywhere?? Hmm… New Zealand. More realistic? Glacier National Park. I have family in Montana and have been to Yellowstone several times, but I would love to go to Glacier, especially with Ryan since he’s never been out west.

    i recently went to tulum mexico- it’s south of cancun, but much less populated, more of local vibe, ancient ruins. very pretty.
