I feel so accomplished right now. I had the most productive call with our credit committee in Japan today and got through to them on several points my colleagues tried to explain for hours over the past few days. I feel like such a good employee, hehe! That’s why the pay me the big bucks, right? 😉


This morning I was quite productive making breakfast…

1 FFL english muffin with Barney Butter and apple butter + pear slices and pom seeds

So creamy – I love this combo! Isn’t laughing cow cheese so versatile?


I attended a pilates class during my lunch hour today. I planned on also doing a 3 mile run before or after class but I was “done” after pilates. I thought I’d be able to come back to the gym after work so I can cross both workouts off the list, but my husband surprised me with an earlier arrival from his business trip… so instead I went on a little date. 😀


I bought all sorts of fun convenience foods at Trader Joe’s yesterday – mostly cut up veggies and lots of fresh produce but these fresh spring rolls with shrimp caught my eye and I thought they’d make a perfect lunch one of these days. I was right! Super fresh and fun!!

The rice wrapper was stuffed with vermicelli noodles, steamed shrimp, cilantro and carrots. The dipping sauce was sweet with a bit of spice. I really enjoyed this after my pilates class. I felt like I was at a spa. 😀

A bit of sugar was consumed in the afternoon… good thing I stock my drawers at work with lots of healthier sweets.

These really satisfy my brownie cravings on a good day (sometimes I still need the real thing though!). It hit the spot today.

    Don’t you love it when you have those meetings that make you feel tremendously smart and accomplished?

    I absolutely adore pilates. Have you ever tried it on a reformer? I love it because it absolutely kicks my butt. For awhile I was taking a semi-private class at my gym and it was great because we would use lots of resistance and go fast so it was like a power class.

    those summer rolls look so good! how do you know the calories? were they labeled? ill bet you most of if is from the sauce. i want some summer rolls for breakfast now 😉

    Kelly – I used to take private lessons on the reformed… a while ago. I really did like it. My gym doesn’t have it though, and I can’t afford a studio fee. I still like the regular pilates too, though. :)

    Innz – I bought them at TJ’s and everything there is always labeled. I think you’re right that most of it is from the sauce. It was a yummy sauce. Great lunch! 😀
