Hi guys, I had such an awesome today – I can’t wait to share it with you. It started with some yummy food, continued with the best run I’ve had in months (!!!!) and finally finished with my first blog video! Some of you wanted to know what I sound like, whether I have an accent, etc. Well, now you can find out for yourselves (and maybe even learn something productive in the process πŸ˜‰ ). But let’s not get ahead of ourselves, here is how today went…


Part I – 1/2 cup 4% cottage cheese + 2 kiwi fruits


Part II – office coffee with Agave nectar + bran muffin




1/2 banana with a packet of Barney Butter. I forgot how much I love this snack!



As mentioned, my workout today rocked! I planned on doing 5 miles on the treadmill and believe it or not, I haven’t done that in months. I was actually nervous before going to the gym today, something I used to experience before super long runs. My game plan was to start out easy to conserve some energy. It worked like a charm – this run was fantastic!! Here is what I did…

  • 0.15 mile walk at 4.5 mph, 0.35 miles at 6.5 mph – warm-up. Then the 0.2 mile intervals began…
  • 0 incline at 6.6, 6.7, 6.8, 6.9, 7.0 mph
  • 0.5 incline at 6.6, 6.7, 6.8, 6.9, 7.0
  • 0 incline at 6.7, 6.8, 6.9, 7.0
  • 1.0 incline at 6.8, 6.9, 7.0, 7.1
  • 0 incline at 6.9, 7.0, 7.1
  • 1.5 incline at 7.0, 7.1
  • cooldown at 4.5 mph – incline 1.5-4.5

Total distance = 5.5 miles (5 mile run, 0.5 mile walk), total time 50 minutes – it was awesome!!!

I did an additional 10 minutes on the elliptical after that, just because I like round numbers. Total workout time = 1 hour. πŸ˜€


Baby spinach, carrots, grape tomatoes, cauliflower, black beans and Annie’s balsamic vinaigrette


+ 1/2 FFL english muffin with laughing cow cheese

I was hungry all afternoon so I couldn’t help but snack away. Healthy and Sane YouTrailMix:


The dried apricots in it are waaay too hard. Quite disappointing. The rest of the mix is awesome (of course it is – it’s a combo of my favorite stuff! πŸ˜‰ )

I promised Nasoya I’do a video of how to use their wonton wrappers, so today was the day since our kitchen will be gutted soon. Here is the video for your enjoyment. Let me know what you think!! :)

To make the dumplings, I used this recipe from Cooking Light. I couldn’t find ground chicken breast, so I took an organic chicken breast and processed it in my food processor, then cooked the ground mixture on the skillet before mixing it with the rest of the filling ingredients (since I didn’t bake my pot stickers, the filling had to be pre-cooked). They were delicious, dipped in TJ’s gyoza sauce. I had quite a few while filming. Yum! πŸ˜€

Dessert – Bridget’s chocolate almond orange macaroons – SO good!


Great day all around. I had a really fun time making the video. Tomorrow I plan on doing the video tour of our apartment because the construction on the kitchen is starting this week!!! So exciting.

    Loved the video! The dumplings look great and it’s funny you mentioned people ask about your accent :) People ask me all the time too!

    Great video!! I made edamame dumplings with those wrappers this past weekend. I still have about half a package left so I’m thinking ravioli should be made! Btw, it’s possible you were so snacky in the afternoon b/c your protein intake at lunch was very low, just something to keep in mind. Have a great day.

    Great job! I never tried using wanton wrappers. I would imagine they’re full of gluten-y goodness, so I won’t be using them now. But I love foods I can make with my hands…like sushi! I love making sushi!

    I am the same way with numbers. If I workout for 50 minutes, I feel better making it an even hour. And 63 minutes would never due, that has to be 70. Quirky, I know!

    I’m exactly the same way with working out. I love round numbers. I always have to have certain numbers for certain things…prime numbers for music volume in my car, multiples of 5 for working out. Glad to know I’m not the only one!

    Don’t you love it when all of a sudden you have a breakthrough with exercise? The same thing happened to me last night. I went to yoga class with my favorite instructor and requested poses that I usually loathe – balance poses. I excel at the flexibility aspects, but balance is another story. Oddly though, some of my poses were the best they’ve ever been and I finally figured out what I was doing wrong in one of my most loathed poses. I even stayed for the pilates class afterwards and I felt so empowered and happy.
