Spring is back

Wow, today was fabulous! I was productive at work, the weather was gorgeous (we had spring weather in December – great weather makes everything better!!!) and I had the best workout all week. I love how powerful exercise makes me feel. I took a Group Power class and was lifting more than the guys – talk about a confidence bust! Let’s see- I also took an abs class, ran 1.5 miles on the treadmill and then stretched for 10 minutes. I was a sweaty mess and I missed it (my workouts all week were just yoga which is great but in a different way). And then I came home to dinner – all ready to be eaten. Seriously, today rocked!!


But let’s rewind to…


I’ve been having a bagel with lox craving for a few days now so today I made it a reality: 2 Kim’s Light ww bagels with whipped cream cheese, wild lox, tomato and dill


The bagels are only 110 calories a pop, so I had 2. This breakfast kept me full for over 5 hours and even then I only ate because it was convenient. That’s some awesome staying power! 😎



B.good southwestern chicken salad – still one of my favorite restaurant salads of all time!


Mesclun, avocado, corn, tomatoes, black beans, toasted corn, and chipotle balsamic dressing – all super fresh and incredibly tasty.

Well today is Thursday, which brings us another Ellie Krieger recipe. I followed her recipe for confetti chili (named three bean and beef chili online), except I made it in a crock pot since I knew I was going to the gym after work and was going to be home late. I threw all the ingredients in the crock pot this morning (browned up the beef in the skillet before throwing it in there) and turned it on during lunch (you could leave it on low all day long), and voila – dinner ready for you when you are!


The colors were beautiful but the taste was missing something – a little more salt and cumin fixed this right up. I enjoyed a second (1/2) helping after gobbling this up. :) Thank you, I’ll Eat You, for picking this recipe for us. It was perfect for a busy night like tonight. A little dessert for the road… I resisted a cookie and made a yummy healthy dessert: 1/2 FFL english muffin with Barney Butter


A few more spoonfuls of BB jumped into my mouth 😳 This stuff has crack in it, I tell ya 😉

And that’s today in a nutshell. I just finished watching So You Think You Can Dance and am once again touched and inspired. Love this show!!

    Yesterday’s weather was bizarre! Deluge in the morning, then warm and sunny in the afternoon. Weird.

    I am a big fan of lox… I fully enjoyed an egg white omelet with lox last weekend for brunch at Trident Cafe. I definitely recommend it!

    I don’t have a crock pot, but will most likely purchase one at some point. The chili looks great, and there are so many other dishes to make using a crock pot.

    Wow girl, all those eats look delicious! Especially the salad and mini brownie. It wasn’t weirdly warm here yesterday–actual relatively cool for Arizona (about 63). Not that it’s ever really crazy cold here 😉

    I was in Boston too, as you know, and I got our for an extra long walk with my cousin. I wore a tank top and it felt so good! Love your breakfast and your lunch (and your dinner for that matter!). I love b.good.

    It does sound like a great day! I love having a good workout and then coming home to dinner.
    A chipotle balsamic dressing sounds so good–I often mix a balsamic with BBQ sauce when I want a little kick. I would love that!

    It is so nice and warm up here (in NH)! Today is 67 degrees and sunny. I can’t get enough of this! That may be because I’m a summer girl. :)

    Incredibly, just 2 days after that 65 degree day, it’s supposed to snow today! You gotta love Boston weather, huh?

    Brownies are my all time favorite treat too. I can pass up most anything else. But never a brownie!

    What a great idea to put the chili in the CrockPot! I bet it was even better after letting it simmer for so long.

    I’m totally stealing that chili recipe. Get this, my mom gave me a crockpot for Christmas last year. then she kept it! I’m taking it back this year and I’m making this right away!
