Nervous baker

I’m making an apple pie right now to bring to Thanksgiving dinner at my sister-in-law’s. I tried making pie crust once and failed miserably so this was a personal challenge for myself. Today, my first attempt at making the dough did not work out (the dough was too crumbly) but after adding another tablespoon of water + leaving it in the fridge for another 15 minutes, it seemed to work better. After taking an hour (slight exaggeration) to make the crust fit my pie plate, I am now impatiently waiting for it to cook. I’m so nervous this is going to be a huge disaster! Cross your fingers for me, guys! :mrgreen:

Today was the definition of intuitive eating.  I felt like I was eating all day long, with short breaks in between, but I tried not to let it bother me and just listen to my body. I actually think I accidentally didn’t eat enough yesterday (work was so busy, I never really got hungry) so my body clearly wants to make up for it. No sweat! 😉

BREAKFAST

TJ’s nonfat organic European style yogurt, 1 pear, pb Puffins, dried cranberries + a handful of cinnamon cappuccino almonds (purchased at the Whole Foods mothership)

MID-MORNING SNACKS

I love the ingredients list of this guy, but life is too short to eat food that makes you gag so in trash it went! 😳 Banana bread larabar to the rescue… love!

An hour later I was still hungry (wtf?!) so I made a little snackaroo to hold me over through a conference call and a dentist appointment. 1/2 FFL english muffin + a packet of Barney Butter. Oh yeah! 😀

LUNCH

I couldn’t come up with anything to bring for lunch this morning so I grabbed a pre-frozen meal from the freezer. I didn’t even know what it was… something I made a while ago that I thought would be a good “emergency” meal. It was rock solid so lunch was going to be a surprise 😆 That was until I received an e-newsletter from b.good telling me about their special turkey burger for the day + free fries. I just had to get it!

Turkey burger with bacon, caramelized onions (I opted out), granny smith apples, homemade maple glaze, and whole-grain mustard…

This burger was incredible! The homemade apple glaze (how do you make that?!!) was sweet, sticky and really tied together the crispy (sweet) bacon with sour green apples and spicy mustard. So many flavors in each bite, I couldn’t get over it. Definitely worth skipping my little frozen meal :)

My mom got me these mushrooms a little while ago, and I was finally able to incorporate them into dinner. How cute are they?!!

I followed a recipe from Jenna for gnocci with browned butter, mushrooms and flageolet beans, cutting down on butter, subbing pinto beans for flageolets, and adding baby spinach and fresh thyme.

This dinner was warm and comforting. I love the little gnocci pillows! 😀

I’m currently munching on some green grapes. Hopefully my hunger subdues by tomorrow, otherwise I will surely eat my weight in pies 😉

  • Wow- what an awesome day of eats! Hope the pie comes out well- I’ve never made a crust myself either.

  • I can commiserate with your baking worries – I made a roasted sweet potato cheesecake yesterday for Thanksgiving today, and water somehow leaked from the water bath into the foil-wrapped springform pan. I’m concerned that the crust got all soggy… we’ll just have to wait to see! Even if our crusts turn out sub-par, I’m sure the cheesecake and apple fillings will be delicious.

    The b. good special burger sounds awesome! Will they make it again? I would definitely try it.

    pie… i’ve had some hits and misses, but my apple pie turned out fabulous this year :) Don’t make enough to have tips though…

    ps- i’ve wanted to try figs!!! should make that a priority :)

    I have a no fail pie crust recipe that is amazing, flaky, delicious… works EVERY time for EVERY pie :)

    Best Pie Crust Recipe:
    3 cups flour
    1 1/2 cups shortening (crisco)
    1 tsp salt

    Cut those together with a pastry blender

    In a separate bowl mix:
    1 egg
    1 tsp vinegar
    5 Tbsp. cold milk

    Make a well in the dry mixture and pour in the wet mixture. Combine using a fork. I usually end up using my hands to finally combine once its mixed pretty well. Chill for a 10 min or so and use plenty of flour to roll out. It makes about 2-3 crusts.

    My grandma and I spend a summer testing crust recipes until we found our favorite. She is in AZ right now with my parents and they all demanded I email them the recipe to use for pumpkin pies this year :)

    Funny thing – I had gnocchi last night for dinner as well! I actually found a whole wheat variety made with sweet potatoes that was delicious.

    I got the gnocchi at World Market, it is made by Gia Russa. I live in Ohio, and they are made in Ohio, so I’m not sure if it is a local product or not, but definitely look for them :)
