Project complete!

I finished my project today!! I had five this month, and this was my last one. I gave it to my boss, who I’m sure is going to have comments on it, but it doesn’t matter… I can breathe! I left work at 5:4opm today. Amazing!! Needless to say, I’m in fantastic mood, and can’t wait to plan our upcoming vacation. Thank you all again for all the restaurant suggestions! A few of you mentioned the same places, which probably means they are really not to be missed. I can’t wait!!! :mrgreen:


I kept my eats as clean as possible today. I felt I needed to detox a bit. Banana oats with unsweetened dried cherries, turkish apricots, flax and almond slivers. Simple and delicious :)




Tuna/hummus/pickle wrap + baby carrots. If you haven’t tried adding hummus to your tuna yet, you’re missing out. It really makes everything nice and creamy (I used 2T for a can of tuna and with these proportions you don’t actually taste the hummus) – no mayo necessary, and you get some healthy fats :)



Clearly, I’m obsessed!

See the little packets of ketchup in the right top corner? I thought they were so cute so I had to take a picture (this is at work)!! I’m such a dork 😆 What’s not cute is the high fructose corn syrup in the ingredients list. We only buy organic Heinz ketchup for the house (same taste, no junk!).



Organic chicken and green beans in TJ’s masala simmering sauce + brown rice


This was a quick and easy dinner, but nothing special. We missed the creaminess of the chicken tikka masala you get at restaurants (which unfortunately is full of full fat yogurt and cream).


I baked some pumpkin pie muffins for breakfast tomorrow. I may have to get a little taste test while they’re still warm from the oven 😉

Oh for workout today, I took a crazy abs and spin classes. Lately my workouts have been extra intense. Not sure if it’s me or the instructors :)  Off to get ready for tomorrow. I’m actually going to attempt to get up early for an pre-work workout. We’ll see how that goes 😕

    in austin you must go to baby a’s( baby Acapulco, _ and get the purple margarita…trust me! The belmont has a really nice roof top lounge ( try their signature martini)…their menu isnt too bad either! There’s so much to do too aside from the food! I work in Austin at the University during the summers, email me if you’d like some suggestions… I could go on forever!!

    Sounds like you’ve been busy! And a mini vacation? Can’t wait to read about it. I hope you’re going somewhere fun.
    Hummus with tuna is a great idea. I’ve tried using Greej yogurt before and it’s not the same. Maybe hummus would be more creamy?

    I’ll have to try hummus mixed in tuna…. I put mustard in it and like it a lot, but hummus sounds wonderful!

    i am so jealous of your exciting workouts lately — i’m in a total workout rut and my gym just canceled one of my favorite classes :( perhaps this is a hint from the gods i need to get into spinning lol

    Very clean eats today!
    Adding hummus to tuna is a must for me. I also add some salsa and stir it all up into a gross, but yummy mess.

    Lara – I think hummus will add the creaminess you’re looking for! I also think that mixing in yogurt is just not the same, especially if you let it sit – it separates. Eww.

    Kirsten – thanks! I’m hoping I can spread the work load better now so that I don’t have to work long nights and weekends anymore. 😀

    Shannon – I think I tried mustard a while back and liked it but I forgot about this fun addition. I’m definitely going to add some next time! :)

    Innz – yes, I think you’ll really like spinning after a few classes! I think it should give you the intensity you’re looking for.

    Ashley – I’m pretty sure I’m making them. If not this weekend, then next 😀

    Runtothefinish – I love the packs. I know it’s a bit wasteful, but it helps with portion control so I’m all for making everything into 100 calorie packs 😉
