I just finished watching this week’s episode of the Biggest Loser and I’m so happy. It’s amazing how other people’s accomplishments can inspire you. This is only the second episode of the season and I already feel so attached to the people… it’s like they are my overweight family and I want them all to lose weight so they can get healthy 😀 Such great results this week!

So today is Thursday, and that means a little Ellie in my belly :) This week sweet and spicy grilled cheese sandwiches were featured on CEiMB. I was excited and nervous about this one. Excited because I love grilled cheese sandwiches. Who doesn’t, right?! Nervous because the sweet portion of it was caramelized onions, which if you’ve been reading – I don’t do. Nope, no onions in this household. Ever. At the end, what you see here is just a spicy grilled cheese sandwich but it was a good one! The pepper jack cheese really added a fun twist to this American childhood favorite (I didn’t grow up in this country so I learned to love it much later in my life… college?). I think it’s a stretch to call this “a recipe,” but regardless – this one is a keeper! 😀



I needed to go to Whole Foods to buy the cheese for the recipe and made the mistake of grocery shopping hungry. This is how you end up with dessert for dinner…


Amazing dessert though! This is a slice of WF flourless chocolate cake and I’m a little afraid of what I discovered here because it’s mind blowing good. I definitely enjoyed every bite :mrgreen:


The rest of today’s eats were much healthier. It is all about balance after all :)

Breakfast: 2 wildberry buckweat waffles with Barney Butter and banana


I seriously can’t go more than 1 day without Barney Butter! It’s a sickness 😆


Mid-morning/pre-workout snack: large carrot with almond butter + peach


Looks odd, tastes delicious! 😀

Lunch: organic mixed greens, heirloom grape tomatoes, carrots, avocado, pan-fried chicken, and almond slivers, drizzled with buttermilk-herb dressing


The buttermilk-herb dressing I made by following this recipe from Cooking Light (substituting dried herbs for fresh). It took just a few minutes and now I have a little tub of it for future salads. It’s a great dressing, creamy and flavorful but light in calories. It really tied all the salad ingredients together.


This salad was such a surprise. I kind of just threw together things we had on hand, and they all worked so beautifully together. Love when that happens! :)


Today’s workout was great but it was nothing I was worried about (somehow only running brings up anxiety). I took a hardcore bootcamp class.  Excluding set up and cooldown the class ended up being less than 40 minutes, so I jumped on the elliptical for another 15 minutes for a little something extra. Man, I don’t remember dripping sweat like this… ever! Have you seen those people that just drip sweat all over the machines at the gym (or maybe you are one of them)? I am a sweater. Big time. But for some reason it’s always all over me, not around me. Not this time… I grabbed extra towels to wipe that baby down when I was done with it. 😉 Love it! Am I sick? lol

In other news, tomorrow is Friday – did you hear? Haha. I can’t wait for this weekend! My sister is coming from New York and we have plans to go shopping, then visit my favorite bakery, and then go for a run (not all in 1 day or necessarily in that order). Doesn’t that sound like fun? 😀 What are you up to this weekend?

Oh and I wanted to tell you that your blog is awesome, I read your about me and I see that you got married last summer and you and your husband are trying to eat well together, I’m getting married in December and we hope to not “let ourselves go” either!     I made that sandwich a while back and it was actually better without the onion! So you didn’t miss anything haha. Love those waffles! Where did you get them? I def need to start buying those for breakfasts when I gotta hop on the T by 7:20.
    There is some definite Barney Butter craze going on in my household. Just got my first jar of smooth and it’s the only smooth nut butter I’ll eat.
    This weekend is unpacking, furniture shopping, and moving in.
    Monday gym class still?

    I’m liking the Biggest Loser peeps this year too! I’m curious as to which one Jillian referred to as “Satan spawn” on her radio show though. Months ago she was saying how much she loved the contestants “except one girl who’s Satan spawn.”

    Grilled cheese is a great basic meal to spice up (both literally and figuratively). I’m envisioning a sandwich of goat cheese with apple slices – so many variations!

    I’m switching places with your sister this weekend. John and I are heading down to NYC to stay with some college friends. I can’t wait!

    Lara – you’re right, grilled cheese is such a comfort food! I think there will be more in our future as the weather gets colder. Comfort food is the best in the winter!!

    omg the bakery section at our whole foods is definitely my magnet isle. i used to get something there every time we went food shopping. now i usually get pulled away by D before anything hops into the shopping basket… yeah that was a craze that went on for too long. lol
    i am sooo psyched for this weekend! can’t wait for tatte 😉

    Spicy grilled cheese sounds just as good! They look great.

    I cannot go into Whole Foods hungry! Same thing with Trader Joe’s. They both have too much yummy looking food; I have a hard enough time keeping myself within my budget when I’m not starving! :)

    Yumm! I love grilled cheese. My favorite recently is fresh mozarella with green olives and pesto. Sounds odd but it’s delicious.

    Anyway, your sandwich looks great, but that cake looks even better. I have to force myself through that section of WF otherwise I end up with brownies or cream filled somethings that I don’t need.
