So yesterday was such a wonderful day. I started the morning with the best breakfast ever, and the day continued on the same happy note. 😀

After relaxing with a cup of coffee while blogging about my breakfast, I folded laundry, and then set out on a 6 mile run.  It was 82* outside! Yeah, that’s wicked hot around these parts! I took Jillian Michaels on the run with me 😉 She’s quite the running buddy. Love her! Anyway, it was hot so I decided to finish up at the gym. I ran for about 4.5 miles and then did another 1.1 miles on the treadmill (I got a crazy blister towards the end and decided to stop a little short so I wouldn’t be out of commission for too long… better safe than sorry!). I was a speed demon on that treadmill. The AC felt SO good! Adjusting from running outside to running on a moving platform was interesting though, but I did keep on increasing the speed. I guess I was running faster outside than I realized (actually including a 1.5 minute walking break which I started taking mid-way to help me with the mental aspect of a “longer” run, my average speed outside was 8:30 minutes, and I was running at 7.3 mph on the treadmill).

The run made me SO happy. Running lately has stopped being a mental game. I realized that listening to talk radio (i.e. Jillian) is the perfect stimulant for me. I am fully aware of the fact that I’m running and that it’s hard, but I don’t have to continue talking myself into finishing. My mind is perfectly occupied with listening to my ipod. It helps that Jillian is my hero too, and I feel like she’d approve of what I’m doing 😉 All right, I guess this is a good segway into telling you what I’ve been planning lately. I’m signing up for the October Boston half marathon! Registration doesn’t start until this coming Wednesday, but I’m pretty sure it’s a done deal. I’m super excited and nervous, but I realized that the only thing that’s stopping me from completing a half is me signing up for it! This realization was 100% fueled by this post by Rose on Healthy Ashley’s blog. It reminded me of a 7.5 mile race I never signed up for, which meant I stopped training for it, and never ran it. After reading Rose’s post, I went online and realized there is a half right here in Boston, leaving me plenty of time to train. So I set up my running training schedule… which I’ve successfully followed so far. I also built in an extra week there so I can skip 7 full days of workouts over the next 12 weeks and be just fine. I know it will get harder but I think it will be all worth it at the end! Any words of wisdom from you guys? I’ve never run this long of a distance before!

Onto the rest of today’s eats. They were all super delicious. I just love when food puts a smile on my face, and today’s meals all made me happy. Lunch was a bunch of random leftovers combined in a pretty creative way if I say so myself 😆 We have 2 tortilla pizzas here:


The first little pizza had texmex flavors: light mozzarella cheese, leftover bbq chicken, black beans + avocado.


The other pizzetta was kind of Mediterranean (maybe?): diced tomatoes, roasted turnips and herb goat cheese.


The pizzettas were really fun to eat! I couldn’t decide which angle to go with, so I had both! 😎

Mid-afternoon included a slice of organic spelt bread with Barney Butter + 1/2 banana:


The toast held me quite well through a Mary Kay make up mini-party. I served the girls some of the blueberry coffee cake I baked this morning:



This time I cut them into 2″ sq pieces (1/16 of the cake)… they were perfectly sized and the girls loved them! (I didn’t have any this time). So there, now you have 2 more happy customers. Love this recipe!

After we stopped playing with make up, I made some macaroni and cheese with cauliflower for everyone (the recipe is originally from the Real Simple magazine). Tina (and Mal) raved about this dish so I had really high hopes for it. I snuck a little taste before baking it and was getting quite confident (btw, I used whole wheat pasta, omitted the onions and olive oil, and used pre-made whole wheat bread crumbs just like Tina). It made A LOT of food!

Sorry, it’s kind of bluh looking. It smelled amazing, though! I have to say I was dissapointed at first. I just wasn’t blown away by it. I think I set too high of expectations for the dish. But the more I ate it, the more I was appreciating the taste. My guests seemed to like it too. The cauliflower also really bulked it up and made it VERY filling. I was stuffed for hours after eating, and I probably ate 1/2-3/4 of a serving tops. Hey, filling is good! 😉 Oh I almost forgot… there was a glass of red wine consumed with dinner but I was too busy chatting away and forgot to snap a photo.

And that was my Sunday. This week is going to be craaaaazy. I hope I survive it… and then the following week… and then the craziness will be over. Can’t wait! :)

    Yay, congrats on deciding to race! I haven’t done any races in a while, but they are so fun and so fulfilling. The sense of camaraderie you get from being surrounded by tons of other runners and the sense of accomplishment you get from knowing you’ve pushed yourself are just incomparable.

    And also those pizzettas look fab. :)

    Isn’t it amazing what a little Jillian can do. I would love to be that motivating, ya know. I think it’s the fact that I see how it’s not easy for her. She is not “naturally thin” or skinny or anything. She has to tell herself to stop eating the cookies, just like anyone.

    Anyway, awesome decision to do the half. 😀

    That’s so cool that you can listen to Jillian while you run! That’d defiitely be a huge motivation for me–I would love to do that!

    HangryPants – I actually was just listening to that episode yesterday where she was saying she couldn’t stop eating cookies lately. I couldn’t believe that JILLIAN had food issues. Wow. I guess we’re all human. She’s such an inspiration!

    Alison, they talk about random health and fitness topics. Lots of motivational talk, answering fan’s questions, etc. Jillian also always prepares a few segments on workouts and latest diet fads, or chemicals hidden in our products (she’s a huge organics promoter!)… it’s just kind of fun to listen to, and somewhat informative. Give them a try!

    Ttfn300 – you listen to nothing while working out? Oh man, I couldn’t be left alone to my thoughts… kudos to you!

    Jenny, 1/2 marathon for now. It will still be an amazing accomplishment for me. I do love working out (and running recently) so I’m excited about training and pushing my body to new limits 😀
