Still recovering

I’m still recovering from jet leg.  Last night I think I was the most tired I’ve been in my life, so after downloading all the food pics I went straight to bed.  Before sleeping, though, I did manage to cook a delicious (man) dinner (it’s Friday!) which was the…

Actually the star of the show was the mushroom medley….

I used this recipe from Cooking Light for steaks with sauteed mushrooms (using top round beef instead of the fancy cut suggested) and the mushrooms were absolutely fantastic!  The fresh thyme was the special ingredient that made the kitchen smell amazing as these guys were sauteing.  I used 10 oz of cremini mushrooms, 4 oz of shiitake and  4 oz of trumpet mushrooms.  I just love exotic mushrooms!  Oh, and I only used 1 tsp of EVOO since I didn’t use any shallots that would have absorbed a bunch of the oil from the recipe.  Btw, do you know what trumpet mushrooms are?  I’ve never heard of them before, so I took a picture for you guys, just in case 😀  Cute, right?

As you can see from the above picture, I also made some mashed potatoes.  I just steamed a large potato, added some light sour cream, skim milk and plain chobani (my new yogurt love!) + s&p and garlic to it until they had the consistency and taste I was looking for.  This dinner totally stuffed me!

I give the raspberry chocolate Kashi bar the same review as the dark chocolate coconut bar – dry bottom, awesome fudgy top!  I think the fudge makes these more like a healthy dessert than a granola bar.

Still going strong with my workouts, although I definitely feel the effect of skipping my workouts for nearly 2 weeks on vacation (we did walk A TON so maybe my endurance didn’t complete wear off, but still…).  I planned to do a 35 minute tempo run with a few minutes of walking before and after (for warmup + cooldown).  I lasted only 35 minutes, including the walks (and even that required some mental pep talk).  Here is what I actually did…

  • 3 minute walk at 4.3 mph
  • 2 minute intervals at 6.3, 6.4, 6.5, 6.6 mph
  • 10 minutes at 6.7 mph
  • 6 minutes at 6.8 mph
  • 5 minutes at 6.9 mph
  • 2 minutes at 7.0
  • 1 minute at 4.3 mph

I really try not to be hard on myself when my actual speed is below the planned speed.  I remind myself that it’s better than nothing and that every day is different.  Sometimes I surprise myself and run faster than planned :)

Then I did 15 minutes on the elliptical and 10 minutes on the stationary bike.  Full workout stats:

  • Duration: 1:00
  • Calories burnt: 580 (35% fat)
  • Ave HR: 158; Max HR: 175

    Hooray for the Chobani!! I never heard of trumpet mushrooms – look cool, though!

  • That steak dinner looks awesome. I can eat a lot of tofu and SP fries but sometimes I just want a good steak :)
    I think that is the first treadmill workout I have seen you do that I think I could do, too :) I know it’s not up to par for you but (as you would tell me!) go easy on yourself–it’s still a good workout!

  • That mushroom medley looks awesome- I’m a HUGE fan of mushrooms. And I agree with you about those Kashi bars- they definitely taste more like dessert (which is maybe why I really like them!)
