Chocolate pumpkin loaf

Oh what a wonderful way to start a morning! :) I woke up this morning and got to baking. I had an open can of pumpkin and knew exactly what to do with it… make Tina’s chocolate pumpkin loaf :D I know it’s been around the blog world back during the Thanksgiving season, but I’m a little slow sometimes. Today was the day though and I’m so glad I saved this recipe. So yummy!

This was SO easy – not much to show in the progress photos, but here we go…

loaf ingredients

everything in one bowl

* I used 1/2 cup of all purpose white flour and 3/4 cups of whole wheat pastry flour; only 0.6 cups of brown sugar (I’d use even less next time), turbino sugar instead of white, egg whites from 3 large eggs instead of boxed stuff and finally only 1/2 cup of chocolate chips (it was plenty!).

I cut the loaf into 10 good size slices but couldn’t resist to go for another 1/2 a slice after polishing this baby off.  Do you see how many chocolate chips there are there?!  Awesome! :D I love baked goods for breakfast (or anytime :lol: )
