So you guys know by now (from little hints here and there) that I’m going on vacation on Friday (OMG it’s THIS Friday!!! – as in tomorrow, yay!). I’m going to Hong Kong and Singapore for 2 weeks. Yes, it’s 100% for pleasure and 0% business. My husband and I are both giddy just thinking about it. I mean Singapore is like foodie heaven and who doesn’t love Chinese food?! Anyways, because of my upcoming vacation work has been crazy. All of a sudden all the deadlines are approaching. This made me miss my workout on Tuesday (hate that!) but yesterday I decided to hit up a few classes. I really wasn’t in the mood to work out (and was super snacky all day long which normally would make me want to just give up and go home and snack/eat some more) so I figured – what the hell, I’ll try some fun classes! This is where the title of my post comes from, so let’s get to the workout first…
I started with a 10 minute abs class (well it’s actually 15 minutes but I was late, ha). It was a brutal 10 minutes… I love that (hate wasting time at the gym). After that this is where the “fun” began. The plan was to attend the Step and Sculpt class, followed by Zumba. Have you ever tried Zumba? I’ve heard such great things about it. I knew it wouldn’t be as good of a workout as a run on a treadmill, but in the spirit of having fun while working out, I thought it would be good. And step classes I absolutely love, although this particular one I only took once over a year ago and remember not being that crazy about it (because it wasn’t fast enough) but again, I thought it would be fun. Obviously I was crazy, because I was SO bored the entire time!!! The step class was sooooooo slow, the only part I liked was the little breaks with weights and even that was like from an 80’s step aerobics video. Seriously, what was I thinking? I was in a pretty sour mood by the time that ended, so I thought I’ll allow myself to stay for only 1/2 of the Zumba class if I wanted to…. oh, did I want to leave! Again, it was just so absolutely ridiculous. I used to dance so I had no problem following the moves but we all looked so silly. And I’d get over it if it was a good workout, but it wasn’t. I tried to jump, twist, move as fast/hard as I could but all I could think of is finding a good time to sneak out of there (of course somehow I ended up right at the front… damn). Finally after 25 minutes of “torture” the girl gave us a water break. Sweet relief! I ran out of there, grabbed my ipod and jumped on the elliptical. I never thought I’d be so excited about an elliptical! I did 30 minutes there. A little better, but I was still in a crappy workout mood. I felt like I was going through the motions. I wasn’t challenged at all, and I spent 2 hours at the gym. Boo! The good news at least I burned some calories, because my mouth was definitely busy stuffing things into it… all day long (all healthy, no bingeing – thank god I had enough self control for that). Workout stats (pathetic for almost 2 hours!)…

Dinner was awesome though, and definitely improved my mood 😀
BEST MEAL OF THE DAY
We didn’t go grocery shopping this weekend because we’re trying to eat everything we have on hand before leaving for 2 weeks. That means I had to get creative. This dinner was the most delicious way to use up everything on hand (chicken + bread for breadcrumbs were in the freezer). I saw Ellie Krieger make this chicken parm recipe a while back and couldn’t get it off my mind. It was absolutely perfect! Although I’d say that good tomato sauce really is key here and we happened to have 1/2 jar of delicious tomato sauce open in the fridge, just waiting for its moment to shine. I made a simple salad on the side, again just using up stuff we have in the fridge.
Can you see how crispy the chicken is? Best chicken parm ever (better than the greesy restaurant stuff I’ve had for a fraction of the calories!). I had a little more of the chicken after polishing off the plate seen above. Mmm, so good!
Yes there was a lot of food. I definitely ate a few things when I wasn’t hungry, just because I felt like them. I need to work on that. The good news I definitely didn’t binge on anything. I was responsible and snacked on carrots (and a little wine) while making dinner (even though I was really hungry) as to not spoil my appetite. And after dinner when I needed dessert, instead of just grabbing a bag of trail mix, I actually measured out a serving. Small victories here, people.
I didn’t count calories today…. I’m estimating I’m probably right around 2000. Maybe I’ll lose weight on vacation? Yeah, right!
