No more slacking

I don’t know what’s going on with me lately.  You’d think with the new year I’d be more motivated to really step up my healthy eating and exercise more, but I’ve been a bit of bum instead.  I know I’m not terribly bad (well except during my fun Foxwoods adventures but that’s kind of like vacation so I don’t count it) but I just know I can do more.  I keep sneaking bites of this and that, which turn into stomachaches.  No more!  Yesterday I got back on track and actually counted calories for the day.  I still never made it to the gym, but we’ll go with baby steps.  Today I’ll count calories AND hit the gym for a sweaty workout.  I love it that it’s Monday and we have the day off!  Love long weekends!! 😀

BREAKFAST

Did you miss my yogurt concoctions?  I seriously can’t go a few days without it.  My husband and I are trying to be more aware of our food budget (well our entire budget actually, but that includes food) so we’ve been really good with buying only the bare minimum and really stretching the stuff we have on hand.  The downside is that I had 2 small apples in the fruit bowl in the morning, and that’s it!  The good news is that my yogurt combos work wonderfully with any fruit.  I do need to go grocery shopping asap, though… I miss bananas!!

Oh yeah, I also finally received the Barney Butter I ordered a few weeks ago.  I was so excited to try the chunky kind for the first time.  Yup, it’s as incredible as I thought it would be!  In the bowl:

  • 3/4 cup of TJ’s nonfat european style yogurt
  • 3/4 small apple
  • small handful of TJ’s golden berry blend (raisins, dried cranberries, dried cherries, dried blueberries)
  • handful of Kashi Golean cereal for crunch
  • 1 T crunchy Barney Butter

The dried fruit was an excellent addition!  It just added a burst of fresh yet concentrated flavor.  This was a delicious bowl!  Btw, if you want to order Barney Butter, you have until the 21st to use Heather’s free shipping code on orders over $14.  Just use the coupon code “hangrypants”.

Btw, this is what it looked like all day here in Boston.  Crazy snow!  I think it’s pretty when you sit at home and just look at it.  Unfortunately my husband and I decided to hit another 2 open houses (one of which was cancelled 👿 ) so I was actually quite annoyed with this weather.  The view from our window after we got back…

When we finally got back home I made a quick lunch.  On the menu: pan seared tilapia with citrus vinaigrette and coscous pilaf – both recipes from Cooking Light, my favorite recipe source!  The recipe for couscous pilaf is not much of a recipe – cook whole wheat couscous (takes just 5 minutes!), add toasted slivered almonds, dried cherries and lemon zest.  So easy and delicious!  Here is my plate.  This was a huge portion, which somehow I managed to finish :)

This was a very nice dish.  I wouldn’t say mind-blowing delicious, but very very nice and fresh.  My husband and I decided that we need to eat more fish.  It’s just so easy to cook and so nutritious.  For those of you who are scared of fish, just make sure you get very fresh cuts and it won’t taste “fishy.”  This was very satisfying and filled me up for hours (although admittedly with the couscous this was a larger meal than I’m used to).

SNACK

I got hungry around 6pm but wasn’t quite ready for dinner.  Weekend schedule just really throws me off.  I looked in the fridge for a snack inspiration and grabbed a nonfat blueberry chobani.  I only realized after popping this baby open that this was my second yogurt serving of the day.  What can I say, I’m an addict! :)  They were different yogurts in my defense…

I threw a small handful of Archer Farm’s cranberry nut trail mix (cranberries, white chocolate chips, almonds, pecans) into the mix after a few yogurt bites.  I can’t eat anything plain anymore…. not a bad thing, I guess.

And yes, this totally spoiled my appetite for hours.  I think I finally made dinner at 9pm and kept it light….

DINNER

Just kind of cleaning out the fridge… a tasting plate of everything. 

  • 1 black bean cake
  • 1/4 avocado
  • 2T homemade hummus (I blogged about how I make it here
  • 1/2 large pickle
  • 2 rainbow carrots
  • green olives

The black bean cake was a little dry today.  I was a little sad about that, but this dinner still wasn’t bad.

A few hours later I had a small glass of Pinot Noir, hanging out with my husband and watching The Office, How I Met Your Mother, and Good Eats.

I think this bottle is like $8 at Trader Joe’s and it was actually quite nice, especially for the price.  My husband finished the bottle… he’s such a lush, haha 😆

And then I got a craving for dessert, duh!  I was about to make some tea and have a 100 calorie pack of something rather, when I stumbled upon the container of TJ’s sipping chocolate – perfect!  I made it with 1/3 cup of hot milk and 3 tablespoons of the mix.  Yum!!

Total calories for the day: 1585

Hope many of you get Monday off.  I’m really loving it!! :)

    I feel you about the calories/gym thing. I’ve been trying to get to the gym more too and just been a bum. Plus I’ve been sick too which is always a bummer.

    One Healthy Apple, I don’t have any brilliant money saving tips, but this is what we started doing… I go through grocery store fliers (our local store send them to us in the mail and Whole Foods has it online) and plan my meals around stuff that’s on sale. I also try not to buy too much that’s not on the list. If I like something, I just note it and buy it next time because usually we already have something similar in the house (I have like 5 kinds of trail mix at home for example, so I’m not allowed to buy anymore until we run out). And then of course, I always bring breakfast, lunch and snacks to work (with rare exceptions). Good luck! I really think that planning makes all the difference. We cut our grocery bill by 1/2!

  • Pinot Noir sounds so amazing right now and it’s only 3:30pm here…hmm…frightening! Anyway, I think you are defintiely your own worst enemy because I didn’t really notice that you were slacking. You’re such a vigilant calorie counter that a couple days off on vacation couldn’t have done that much damage to your goals! (Don’t mean to be preachy, just reassuring you.)
    I haven’t tried Barney Butter yet and I am seriously considering having it shipped to my mom and having her send it on to me. Can you tell me if it is really that much better than just generic almond butter? I want to make sure it is worth it!

    Re: Barney Butter – the first few times I tried it I thought it was just ok. I used to like the raw almond butter, but this is roasted and is much sweeter. After eating it for a little while, though, I got totally addicted and think it’s like the best thing since sliced bread! Hehe 😆 I don’t want you to be dissapointed, though, although my sister had a similar reaction (wasn’t crazy about it at first but now just ordered another 3 jars!) and most bloggers are a little obsessed with the stuff so your chances of liking it are probably high. Too bad shipping to the UK is such a pain!
