Lovely eats

I had so many lovely eats today!  My stomach was freaking out again due to an overeating incident last night, so I didn’t eat that much (no snacks at all today!) but what I did eat was oh so good!  The pictures can probably do most of the talking (scroll over for descriptions).


Blueberries and kiwis were on sale so I decided to make my breakfast a little extra fruity this morning.  Under all that fruit and “frosting” there is a special surprise: a tablespoon of Barney Butter! 😀

I ended up eating lunch because it was already 3pm and I still wasn’t hungry.  Thankfully, despite looking kind of gross (yeah I decided I have to re-start taking pre-dressing salad photos!) it was very delicious!  In the salad was the last one of the black bean cakes I made last week.  I think I used all 4 of them in very creative ways, if I say so myself 😉

Dessert… this batch of chocolate bars isn’t very good.  See how it’s kind of white?  I would return them but I’m too lazy.  They still taste pretty good, but I know they can taste great (I’ve gone through many packages over the last few months)!

My husband likes “man dinners” on Friday nights… something like burgers, steak, pizza or tacos.  Basically if we’re staying in, he at least wants to feel like he’s kind of eating a cheat meal :)  So this morning I threw a whole pork tenderloin (1 lb) with a jar of TJ’s salsa verde and 4 garlic cloves into our crock pot, set it on low and went to work.  The result about 10 hours later was fork-tender yummy lean pork, ready for carnitas tacos 😀  I loaded these babies up with some good stuff!

Speaking of tacos, I got this article on taco kits from eBrands.  I would never consider something like that healthy, but I think it’s worth keeping in the cupboards for emergency tacos.  Have you tried this kind before?


I just got back from a great workout!  Yes I went to the gym after 10pm, but that’s where having a gym in the building really pays off.  I had a lot of energy to burn and so I did just that.  To ease myself into a workout, I started with a 10 minute Abs class from the On Demand channel on my cable box, and then I grabbed my HRM, the Sopranos dvd, and headed out for a 65 minute run on the treadmill.  I warmed up for 2.5 minutes, ran at 6.5-7.0 mph at 0-2.0 incline for 65 minutes and cooled down with a 2.5 minute walk at 4.3 mph.  I then started another yoga program from the cable box to relax myself, but after about 5 minutes I turned it off.  I was just so sweaty and gross – I couldn’t get over it.  I don’t know how you ladies out there do yoga after a run!  Anyways, I feel great!!

And after the shower my hunger finally kicked in for the first time all day.  I started with an orange and finished with a spoonful of Barney Butter 😀 SO GOOD!
