100th Post!

Sorry for the lack of a post last night.  I was going to do a quick one, but then realized that it was my 100th post and I couldn’t just ignore that!  It had to be a little special :)  Since we just wrapped up the year and I posted links to some of my favorite meals since beginning the blog, I didn’t know what I should do.  But tonight, on my way home, I picked up a package that made me feel like a real blogger for the first time (how fitting for a 100th post anniversary! 😀 ).  I got a package from the nice people at KIND who sent me five of their new KIND Plus bars to try because I was disappointed with the last one I tried and they wanted me to know that they are working on improving that particular flavor.  Anyways, I’ve never received a food related package and it felt pretty cool that they read my post and contacted me, and cared enough to explain the situation and send me some more products to try.  I cannot wait to try all of these bars!  I promise to do a full recap when I eat all 5 – so in 5 days 😉  Ok, I hope I can hold out for a little longer than that.  We’ll see.  Here are my new fun bars (with a nice letter in the background):

Kind Plus bars


I subscribe to emails from eBrandAid and after receiving one today, I thought it may be helpful to make some of you aware of this great company.  

BrandAid is a free, bi-weekly electronic newsletter that aims to teach shoppers how to find the healthiest and best-tasting foods in their local grocery stores. They teach shoppers how to decode food labels in order to spot “healthy food imposters” packed with preservatives, chemicals, and artificial ingredients that are known to contribute to chronic disease and obesity.  To earn the BestBrands Stamp of Approval, a product must adhere to a strict set of BrandAid guidelines (a product must be free of harmful chemical additives, it must be processed as little as possible, while still maintaining its nutritional value).  

That’s definitely in line with how I strive to eat!  When you sign up, they also send you a very helpful reference guide with code names for all sorts of artificial stuff and also names for all-natural brands (or certain products of a brand).  I keep a printout in my purse and reference it once in a while, while food shopping.

Yesterday after work I met up with a few girlfriends for some drinks.  I wanted a healthy dinner and to make sure that I really stuck with it, I threw a spaghetti squash into a crockpot in the morning and set it on low.  I figured this would ensure that I didn’t order a meal at the bar and ended up stuffing myself with wings or other unhealthy bar food.  My friends were hungry, though, and ordered a bunch of food, which brings me to the highlight of yesterday’s eats… truffled parmesan frites at Vox:

What you see above are just 2 pieces of calamari and a few fries.  Of course after those came a few more – multiply this plate by probably 3 and throw a few more fries in there 😀  They were so good!!!!  On par with any fancy restaurant truffled fries I’ve ever had.  Amazing!

Another really great snack from yesterday was the blueberry chobani with fresh blackberries.  The yogurt was very sweet and I had it immediately after my lunch (leftover gnocchi) and it made for a great ending to the meal.  I don’t like that they add sugar to the yogurt, but I guess I didn’t need to add chocolate chips or some other “sweet additives” to it so maybe it evens out.  This combo was delicious!

I did something similar today with the peach chobani and added 2 apricots that were on their last legs.  Another good one!  I love discovering new snacks!! :)

Today’s food highlight had to be my after-dinner dessert.  I had really delicious eats today, but this was really to-die for.  I used a TJ’s low carb ww tortilla, spread about 1/2 tablespoon of nutella and 1/2 sliced banana and grilled it on the George Forman grill.  Oh my!  I just love warm desserts!!

Other noteworthy eats of today: Caitlin’s cornbread casserole.  I’ve been craving corn bread for a little while now, and decided to finally make this lovely dish when I was going through my saved blog posts.  Of course I made a little bbq meal out of it, with bbq chicken and mixed string beans + carrots.  Yum!

So much delicious food!  I also had my way with the bag of trailmix last night again 😳 !  The bad news is that I finished it, but the good news is that this ensures that it won’t happen again for a while (hopefully never!).  I’m taking a little break from this trail mix.  It’s definitely a trigger food and I can’t control myself around it.

Today’s total calorie count: 1465 (much better!!)

There was no exercise in the last 2 days.  My stomach has been acting weird (it’s definitely the trail mix overeating) and I got busy, etc.  Tomorrow I’m so going to sweat it out – it’s going to be glorious!!

I was feeling bluh earlier at work, and my co-worker asked me what was wrong.  I said I was in a self-hating mood and she said: “Elina, you are an intelligent, beautiful and a very nice girl.  Don’t do this to yourself!”  I decided to listen to her :)  Concentrating on the positives is just so much better than dwelling on past mistakes! Mental health is very important!!  So for all of you out there, stay positive!  There are many people who I bet aspire to be like you!  Healthy and sane, right?

    i can’t believe it’s been 100 posts already! congrats.
    i have a question about your low carb tortillas. you’re always using them and every time i’m at TJ i try to find them but for some reason haven’t yet. one time i found a low carb lavash in the refrigerated section next to the cheeses etc… is this the same stuff? it was really good but i haven’t been able to find it since
    help me!!! i have a tub of whipped cream cheese in the fridge that i refuse to use in anything but fruit/ granola wraps

    Whipped cream cheese with fruit and granola – that sounds amazing!! I need to try it asap! The wraps are in the refrigerated section, usually by the hummus and the fresh pizza dough. They’re 50 calories/pop just to give you a reference of their size. The other ones I’ve seen are much higher in calories, but I really like this kind because you can eat more than 1 and they are nice and chewy :) I think the lavash is something different although it sounds good too!

    Congrats on 100 posts. I look forward to your Kind Bar review as I’ve never had them, but am intrigued from what I’ve read so far.

    The presentation of your simple tortilla with bananas is delightful! Looks so enjoyable to eat. 😀

    Hey – I just wanted to answer your questions from my blog:

    1. I cooked it in the microwave by first pricking it with a fork all over so it wouldn’t explode. Then I popped it in for about 4:30 minutes and let it cool until I could hold it. I then cut it in half and put it face down in a micro-safe dish. I put a little bit of water in the dish and popped the whole thing back in the microwave for about 10 minutes (sometimes less depending on the size of the squash). Once it cooled enough to touch I used a fork to get the strands out. Hope that helps :)
    2. The Kashi granola bars are called Kashi Fruit and Grain bars the flavor I had was dark chocolate coconut but they also have Pumpkin Pie and Raspberry Chocolate. They’re pretty new but I found them at Target and Meijer. I hope you can find them because they are REALLY good!

    Yeah Bridget, I was trying to go for a healthy crepe-like dessert. It really worked! I definitely recommend this healthified version!
