I finally have a real blog on my own domain – so cool! Having a geeky husband definitely helped a lot… I would never brave this on my own. I am very excited about it though – it really does feel more mine, if that makes sense. 😀
Together with my husband, I spent a good amount of time today designing the layout of this blog. Around 2:30 or so I finally got hungry and made us lunch. I was talking to a friend of mine (and a reader of my blog ) and she mentioned how easy and filling taco salads are. My husband loves mexican food, so I decided to add it to this week’s repertoire. I just browned some ground beef on a skillet with a little bit of chipotle taco seasoning and then threw all sorts of stuff on top of lettuce. Easy and delicious!
My salad included lettuce, lean ground beef, grape tomatoes, avocado, black beans, green olives, a little bit of cheese and sour cream and a whole lot of salsa. I used the salsa as the dressing so I added a bunch more after snapping this photo. Here is a close-up of the salad… It was a big hit with the hubs (and me) 😀
While working on the blog I also snacked on some pomegranate seeds (see picture above 😀 ) and right now I’m having a bit of TJ’s nutty american trek mix… I think I was having chocolate withdrawals.
