I started the day with a workout today!  This may be typical for many of you, but I don’t do well in the mornings.  I usually have a hard time falling asleep regardless of how tired I am or how late it is so in the morning it’s nearly impossible to get out of bed.  I was determined, though, and I’m so glad I did it because I got a lot more done at work and didn’t have to worry about fitting a workout in… it was already crossed off my to-do list before 9am!


I took the Journey to the Core class this morning at the gym.  I’ve taken it before during lunch with a different instructor but this girl was way better!  It is a boot camp type class, with different intervals of cardio and weights.  It was a lot of fun!  I did have to fight a little bit of sleepiness, though.  I am definitely not at my best in the mornings, but it was still way better than potentially nothing!


Going back in time a little bit, I ate a trial size Think Thin chunky peanut butter bar.  It was tiny, but it definitely had me going for a few hours.  I didn’t think once about food!

Sorry the picture is a bit dark… it was dark and rainy early this morning!  Here is what the bar looks like on the inside.  The chocolate covering was a very pleasant surprise.  I liked this bar :)


Once I got to the office, I had another pumpkin chocolate and peanut butter chips muffin + coffee.  It was still delicious!  I have one more left so you’ll have to see it one more time.  I can’t wait to eat it 😛


It was pretty cool not to work around my gym schedule once I was done.  This breakfast (+pre-workout snack) combined with mild work stress, kept me full for many hours.  I am usually starving before noon but I didn’t even think about food until 1pm today and I only ate then because I felt like it was probably time… plus I needed a mental break :)

For lunch I utilized the rest of the mustard maple chicken I made on Sunday and made it into a sandwich.  Here you see the Ezekiel English muffin with a wedge of light laughing cow cheese, some grape tomatoes and the chicken.  When I put it together last night, I was afraid it was going to be unsatisfying because there is no melty fatty cheese or avocado (both of which I considered but omitted because actually this was already a good amount of calories) but it was perfect!  I really love these English muffins.  They are a little higher in calories (160) for an English muffin (half of one is actually a serving) but they are perfect as sandwich rolls.  My sandwich was very hearty and I completed the lunch with an adora disk for dessert.  De-licious!


A few hours later I was craving veggies, so I grabbed some carrots and cottage cheese.  The carrots were extra sweet today.  So good!

And around 6pm or so (I was still at work) I decided I wanted some chocolate.  This was not a crazy craving that I coudn’t talk myself out of, but I decided to just let myself enjoy something I wanted and I really did enjoy it 😀

I had very elaborate plans for dinner, but both my husband and I ended up coming home quite late.  That and he had a huge turkey dinner at work (they had a little office Thanksgiving) so he wasn’t hungry.  I didn’t want to make this huge meal just for myself so I quickly brainstormed and found a few leftovers that emerged into this:

Tortilla pizzas!  You know I was trying to use up leftovers because we had about 1.3 tortillas left, so that’s why you see that little guy in the back.  I toasted the 1+ TJ’s ww low carb tortillas (these are awesome btw! and only 50 calories a pop) in the toaster oven (sprayed with some Pam olive oil), then topped them with some pizza sauce, leftover ground beef (which was sauteed with some chipotle taco seasoning on Saturday), 1/4 cup of black beans and about 3/4 oz of mozzarella cheese.  Back in the toaster oven until the cheese melted and voila!  My husband ended up taking a bite and then ended up staring at me with every bite I took so I offered him a quarter of my little pizza.  So altogether he probably ate that little stray piece.  It was incredible and as my husband said: “Cravable!”  You’ll be seeing more of these, but next time we’ll actually plan ahead for them.  Seriously awesome!

Oh, I just remembered… I also had a tiny sliver of pumpkin pie they were promoting at Trader Joe’s (I stopped by there after work for dinner inspiration but ended up coming up with the little combo you see above).  I didn’t look up how many calories it was but it was a very tiny sliver and it didn’t taste oily so I’m not worried :)

Total calories for the day: 1248 + tiny pumpkin pie slice

I’m in a surprisingly good mood right now.  Maybe this whole working out in the morning is for me after all!  I’m going to try to squeeze in a morning run before work again!  This will require an even earlier rising, so we’ll see… I’ll report back tomorrow! :)

    I haven’t been to TJ’s in ages so when I go next I will look out for those tortillas! They sound like the stats of the La Tortilla Factory ones? Have you tried those? Great job on your morning workout. I am trying to make them a habit a couple times a week but it’s still tough for me, too.

    Lara, I’ve never had (or seen) the La Tortilla Factory tortillas… I’ll be on the lookout for them next time I’m in the grocery store. It could be fun to compare the 2!
